Yearly Ranking of World Gastronomy: LA LISTE 2017 Unveiled in Paris

Atout France

LA LISTE, THE GOLD STANDARD OF RESTAURANT RANKINGS

Designed by an international team of experts headed by Philippe Faure, LA LISTE aims to create a reference in gastronomy, dedicated to travellers and gourmets worldwide. Its methodology is fair, unbiased and transparent. It is inspired by "metarankings” already in use in several fields, such as academic studies (Shanghai Ranking), sports (ATP) or art (Rotten Tomatoes, Metacritic) :

• For each restaurant, LA LISTE synthesises all existing reviews available online (TripAdvisor, Yelp …) or on paper (gastronomic guides, columns in the specialised press).

• The ratings given by the various sources are standardised and weighted according to their perceived reliability, according to a poll conducted with local chefs.

• This weighted average determines the restaurant's global score, ranging from 0 to 100 (with increments of 0,25 pts).

• The world's top 1000 restaurants are then ranked accordingly

NB: In total, almost 400 sources were used, from the most established (Michelin Guide, New York Times…) to more recent ones (United Arab Emirates “Carême” guide, Angolan magazine “Rotas y Sabores”, etc.).

1000 EXCEPTIONAL RESTAURANTS

Several major trends emerge from the 2017 ranking:

• Japanese gastronomy triumphs once again, with 116 restaurants among the top 100.

• The leading trio is completed by France (113 restaurants) and China (Hong Kong and Macao included, 100 restaurants).

• Italy is ahead in the « Best value » section

• Swiss restaurants (40) are performing very well relative to the size of the country. The marked progression of Australia (10th most represented country with 27 restaurants) is also to be noted.

• Despite a relative stability at the top of the ranking, new names have emerged, such as “Nicole” restaurant run by young chef Aylin Yazicioglu (no.1 in Turkey).

• Among the new-comers in the top 1000, there are restaurants located inBermuda (1), Saudi Arabia (2), Iran (1) and even Liechtenstein (1).
