Michelin-starred chef Yannick All�no recently collaborated with One&Only The Palm to develop three distinct dining concepts - ZEST, STAY by Yannick All�no and IOI - opening in October 2010. Celebrated for his role as head chef of Le Meurice in Paris, All�no wishes to indulge guests with an array of both local and international cuisine to complement the understated elegance of this boutique beach resort.
Coined "le prince des palais," by his peers, All�no entered the elite circle of the world's greatest chefs after receiving his third Michelin star in 2007 and "Chef of the Year" in 2008 for his role as head chef of Le Meurice. At One&Only The Palm, All�no will offer a unique array of dining experiences designed to provide a distinct mood and ambience paired with innovative haute-cuisine. From romantic evening celebrations at STAY by Yannick All�no and casual gatherings with family and friends at ZEST to party goers at IOI by the marina - the restaurants are destinations unto themselves.

THE RESTAURANTS
ZEST The resort's main restaurant, ZEST, blends the culinary influences of the Orient and the West within a fresh and interactive dining concept. Main courses are prepared from two theatrical show kitchens where guests are asked to select one key base - poultry, meat or fish - prepared to their preference.
Expansive floor-to-ceiling windows create a decidedly elegant and light ambience with the use of fresh modern finishes and fabrics. Glass leaf and cut quartz crystals and accent flourishes of the arabesque-feel interior promotes a conservatory-style indoor dining environment. Able to accommodate over 120 guests, ZEST provides a collection of indoor and al fresco dining options overlooking the grand pool and Moorish gardens rimmed with lemon and tangerine trees.
STAY by Yannick All�no With a focus on imaginative cuisine, the speciality restaurant, STAY by Yannick All�no, surprises with signature dishes showcasing traditional cooking methods reinterpreted in a contemporary fashion.
Set against a decadent backdrop of high timber walls and furnishings in a monochromatic palette of black, bronze and silver, STAY by Yannick All�no provides a fine-dining experience without traditional formality. Touches of rich burgundy and vaulted ceilings decorated in Bohemian black crystal chandeliers provide an opulent and contemporary atmosphere of refined elegance.
Communal seating such as The Conversation Table, a curved 'S' shaped lounge overlooking the restaurant encourages socialising while the Pastry Library invites guests to play an active role in the creation of their desserts from selecting the final ingredients to observing the preparation by the chef de patisserie.
