World famous chef Nobu Matsuhisa will return to his Hong Kong restaurant for two special Champagne dinners on Monday, October 14th and Tuesday, October 15th pairing Taittinger with his innovative Japanese cuisine. The 8-course Champagne pairing menu is HK$1,938+10% service per person.
For the Champagne selection, Nobu’s Sommelier Roy Chu has selected 3 Taittinger labels and
2 Comtes de Champagne (Taittinger’s Premium brand)
The Champagne Pairing menu includes:
· Taittinger Vintage Brut – 2005 paired with Scallop Tartar / caviar, ume sauce
· Taittinger Brut Reserve - non-vintage paired with Hamachi Sashimi / finger lime, yuzu miso
· Taittinger Prestige Rosé Brut - non-vintage paired with Nobu’s signature Black Cod Saikyo Yaki
· Comtes de Champagne Blanc de Blancs – 2004 paired with Lamb Chop / Rosemary Miso
· Comtes de Champagne Rosé – 2005 paired with A5 Kobe Wagyu Striploin / truffle teriyaki and Roasted Lobster / shiso salsa
The 8-course menu continues with a Sushi Assortment and Clear Soup and, for dessert, “Shanpan Evolution”, NOBU Pastry Chef Lawrence’s creation of Champagne jello and foam, Champagne lychee granite and berry sphere
Nobu-san will be on hand in the kitchen and restaurant as guests experience the full range of Taittinger Champagnes, perfectly paired with his celebrated cuisine.

About Champagne Taittinger from Reims:
Champagne Taittinger was founded in 1734 in Reims by Pierre Taittinger. Taittinger first visited the Champagne region when he was a First Liaison Officer during World War I. Due to his passion for gastronomy and wine, several years later he returned to create the Champagne House with his brother-in-law. After a short time under outside ownership, Pierre-Emmanuel Taittinger bought back the business in 2006. Since then, it is again a family run business with both Taittinger’s daughter Vitalie and his son Clovis involved in the Champagne House.
The flagship wines of the House are the Comtes de Champagne (composed of 100% Chardonnay) Comtes de Champagne Rosé (70% Pinot noir and 30% Chardonnay).
