On Friday, September 11th, internationally acclaimed chef Alain Ducasse will be back at his 1-Michelin star SPOON restaurant at InterContinental Hong Kong for a Gala Dinner.
For the occasion, SPOON Executive Chef Stéphane Gortina is preparing a 6-course Gala Dinner Menu – specially priced at HK$1,688 per person, inclusive of a Champagne Reception with Alain Ducasse at the SPOON Bar from 7:00pm-8:00pm.
The 6-course menu showcases SPOON's contemporary French cuisine inspired by Alain Ducasse, using his refined French culinary techniques and the freshest ingredients of the season.
Following the Champagne Reception with Alain Ducasse, guests will dine on:
- Chilled Courgette Velouté, fresh goat cheese
- Warm Young Rabbit and Foie Gras
- Cookpot of Spelt, seasonal vegetables, herb pesto
- Blue Lobster, chanterelles, salicornia and lemon
- Wild Strawberries in warm jus, mascarpone sorbet
- Chocolate from Alain Ducasse's Manufacture de chocolat in Paris, crunchy praline
SPOON Sommelier Mathieu Ginglardi has prepared a wine pairing option for an additional HK$1,288 per person which includes:
- Champagne – Notes Blanches – Fleury
- Chateauneuf-du-Pape –Domaine de Marcoux 2013
- Chassagne-Montrachet 1er Cru – Les Caillerets – Marc Colin 2012
- Champagne – Petite Douceur Rosé - Gosset

About Stéphane Gortina, Executive Chef, SPOON by Alain Ducasse
An eleven year veteran of the Alain Ducasse Entreprise, Stephane Gortina rejoined SPOON by Alain Ducasse as Executive Chef in Fall 2014 after one year in Doha as Assistant Head Chef of kitchen operations at the Museum of Islamic Art (MIA). Prior to that, he was Executive Chef at Ducasse's MIX restaurant in St. Petersburg, Russia. He first joined the group in 2005 at the 3-Michelin Louis XV in Monte Carlo. In 2006, Stephane became sous-chef at La Bastide de Moustiers, Ducasse's 1-Michelin star restaurant in Provence, France. Then in 2008, he moved to Japan as part of the pre-opening team of Le Comptoir de Benoit in Osaka where he was promoted to Executive Sous-Chef.
Stephane next relocated to SPOON by Alain Ducasse at InterContinental Hong Kong as Executive Sous Chef in 2007, working with then Executive Chef Philippe Duc on the “Evolution of SPOON”, following which the restaurant received its first Michelin star. In 2009 he was appointed Executive Chef of SPOON des Iles at the One & Only Resort Le Saint Géran in Mauritius.
As per Stéphane, “I love learning the culture of a country through its cuisine, from visiting the local markets to trying new ingredients and tastes I have never experienced before. This is what gives me inspiration to create new dishes. Food is a universal language that transcends cultures. The way we share and communicate with food tells a lot about a place.”
