Last week, Crown Resorts with nearly 300 VIP guests celebrated the appointment of internationally renowned restaurateurs Neil Perry and Guillaume Brahimi as Crown Resort's Culinary Directors for the next three years.
In this newly formed role, Perry and Brahimi will combine their expertise to influence all menus across Crown Hotels and Events and Conferencing, collaborating to create a new premium banquet menu, redevelop the in room dining options at Crown Towers, provide guidance and training at Crown's Culinarium and continue to oversee Crown Resort's world class food and beverage offerings.
Perry and Guillaume's influences on the new menus are evident; at the launch last Tuesday night, diners were treated to Perry and Guillaume signatures including Cinnamon scented lamb with baby vegetable tagine and couscous (Perry), Braised wagyu beef brisket, parsnip, garlic and parsley puree, Paris Mash (Guillaume), Black Forest trifle (Perry) and Chocolate soufflé with coffee ice cream (Guillaume), all of which will also be available for future guests at Crown to order and enjoy.
This new collaborative menu will add a five-star sparkle to Crown's corporate events, conferencing and weddings, and is the first time that the award winning chefs celebrated cuisine is available for large scale functions and events. The culinary ambassadors have also redeveloped the in room dining menus for all guests of the five-star Crown Towers, which allows all guests in residence to enjoy the critically acclaimed culinary excellence.
To carry their culinary expertise across the board, Perry and Brahimi will be actively involved with the training and mentoring of the culinary team working across all Crown Melbourne venues, comprising more than 500 employees. The pair will provide guidance in all culinary appointments and personally train, develop and mentor Crown's apprentices and leading chefs in all premium outlets through regular tutorials and demonstrations.

Both Perry and Brahimi will also continue to oversee some of Crown's finest restaurants such as Rockpool Bar Grill, Bistro Guillaume, Rosetta, Spice Temple and Silks.
