American Independence Day gets a special celebration this year when guest Chef Edward G. Leonard introduces his “Flavors of America” menu at Galaxy Macau. One of only 72 Certified Master Chefs in the United States, Chef Edward is also Vice President of Culinary Education and the Corporate Chef at Le Cordon Bleu North America, as well as Managing Partner of the Chef Edwards Restaurant Group, based in Chicago. So get ready for some serious fireworks when on 6 July 2013, Chef Edward brings his considerable culinary expertise to Oasis, a lifestyle event venue located on the spectacular Grand Resort Deck. Topping off the experience is that each creation will be paired with wines from the US, selected by Galaxy Macau’s Master of Wine, Jeannie Cho Lee, herself one of just 304 MWs in the world. After welcome cocktails featuring Loredona Pinot Grigio, guests will sit down to a dinner that includes incredible dishes such as:
- 1st course: Asparagus, Crispy 5-minute Egg, Pork Crackling and Wild Mushroom paired with Loredona Pinot Grigio 2011
- 2nd course: Lobster Soup, Lobster Beignet, Cauliflower Roasted Flan and Herb Butter paired with Clay Station Viognier 2009
- 3rd course: Tuna, Macadamia Brittle, Shaved Hearts of Palm and Citrus Brown Butter, paired with Clay Station Viognier 2009
- 4th course: Goat Cheese, Greens, Cured Tomato, Artichoke and Basil Dressing paired with Fog Head Highland Reserve Sauvignon Blanc 2010
- Main course: Dry-aged Rib-eye Mignon, Oxtail Potato Croquette, Charred Vegetables and Jus paired with Brazin Old Vine Zinfandel 2011 and Black Stallion Cabernet Sauvignon 2009
- Desserts: Pastry Plate, Trio of Americana, Crafted Modern Classics including Smores, Boston Crème Pie and Key Lime Pie, paired with sweet Donnafugata “Ben Ryé” Passito di Pantellaria

Following overwhelming response for the Walter Kei Menu, the Galaxy Celebrity Series is back again at Terrazza, Macau's favorite southern Italian restaurant. The re-birth of flavours at CHINA ROUGE
Molecular Mixology is a special art form that blends the best scientific techniques with the flavours of traditional cocktails to reinterpret classic drinks in an exciting new way. The masterful molecular mixologists at CHINA ROUGE, one of Macau’s most prestigious and exclusive nightlife spots, have created a modern masterpiece from a cocktail classic with their new Molecular Mojito. This new take on a Cuban favourite uses the cocktail’s base flavours of infused rum and mint leaves with a few new twists including delicious fresh fruits like blueberries, lychees and strawberries as well as lychee liqueur, blueberry liqueur and crème de cassis. But what makes this cocktail truly unique is its preparation, all the ingredients are mixed and gelified together then playfully served on a plate and garnished with a lime juice foam created through a process of emulsification, making this a Mojito unlike any you’ve ever had before!
