Take a trip around the globe in Sydney this month, through the city's newest eats. Try a fresh Mediterranean spot on the water, ritzy hotel bars, Roman feasts, and a coastal-inspired restaurant in the city. Plus, two new zoo exhibits and more.

Seaside seafood
Follow the water to St Siandra, Mosman's stunning, new waterside restaurant. The Mediterranean venue (led by the ex-head chef of beloved Surry Hills restaurant Nomad, Sam McCallum) is a seafood hub. Make a booking for locally sourced fruits of the ocean, seasonal produce and killer views in a sunny spot that'll leave you dreaming of holidays.

An Italian affair
Palazzo Solato is set to become a new inner-city Italian favourite when it opens this month. The 120-seat venue from the Ragazzi and Fabbrica team will offer a variety of unique hand-shaped pasta, grilled meats and more. It'll have a bar with its own private entry, plus another bar and dining room, with interiors inspired by traditional Italian trattorias.

New Bondi French
A French bistro and bar has landed in Bondi. ChouChou brings nostalgic Parisian fare, alongside thoughtfully chosen wines and iconic French cocktails to its by-the-beach location. Settle in here for a night of classics – from croque madames to nicoise salads and wine by the carafe.

Dine at the Zoo
For the first time ever, Taronga Zoo restaurant Me-Gal is open to the public. The once-exclusive restaurant, located within the Wildlife Retreat at Taronga Zoo, plates up a uniquely Australian menu with a focus on seasonal produce and native ingredients. While dishes come and go with the season, Me-Gal's incredible sweeping views of the Sydney Harbour Bridge, Opera House and city skyline are forever.

After hours falafel
Jimmy's Falafel, a George Street favourite, has reopened just 80m down the road in a larger space with more room for dining in. Just like its original outpost, Jimmy's 2.0 sells stuffed-to-the-brim pita pockets, herb-packed falafel, harissa-spiced chips and more. Duck in at the end of an evening, or mid-way through, for some late-night fuel.

Casual Latin American
Flavours from Mexico to Argentina and all sorts in-between are heroed at Fugo, a new, casual Latin American eatery in the city. There's calamari fritos, a classic Cubano, tequila pasta and lots more to try here.

Euro cool in the CBD
Sydney's five-star Swissôtel has unveiled its grand lobby bar Arches on Market. Head up to level-eight for old-school charm and reprieve from the busy streets below. Pull up a stool for a curated list of classics – cocktails, wine, spirits – and a French-inspired snack menu.

A coastal-inspired eatery
Longshore is a new venue from the former Hartsyard duo, Jarrod Walsh and Dot Lee, opening in April. The seafood-focused restaurant will open in the old Automata site, next to The Old Clare Hotel, and offer both a la carte and a 10-course flight. Expect a highly seasonal menu where Asian techniques and ingredients will sing.

A history-filled café
Havenstone is Parramatta's new breakfast and lunch eatery set in the heritage-listed Female Factory building. Find orange and honey French toast, a house tea-smoked salmon rice bowl, and breakfast bagels here, plus a range of baked goods including scones and pavlova – perfect with a cup of tea before wandering around the sandstone building and grounds.

EXPERIENCE

A thrilling pre-historic adventure
Step back in time at Sydney Zoo's Dinosaur Safari exhibit, running 1 to 30 April. The free (with a Sydney Zoo ticket) safari includes a dinosaur trail of life-size roaring dinosaurs, a Jurassic rollercoaster, a fossil dig and a special safari shop. Keep an eye out for a Stegosaurus, Triceratops, Velociraptor, Allosaurus and a T-Rex when visiting.

An immersive Australian habitat
Taronga Zoo also has a new experience opening in April, Nura Diya. Nura Diya is an opportunity to connect with some of the oldest flora and fauna species in the world, in their unique habitats. The 400m walking trail sees visitors stroll among kangaroos, dingo pups and even up in the tree canopy with the koalas.
