What's New at NOBU This Summer: Miyazaki Wagyu Beef Promotion (July 6 – 26) and Imported Japanese Craft Beer & NOBUTapas (August 3 – 30)

This July, NOBU InterContinental Hong Kong is showcasing exclusive  Miyazaki Wagyu Beef , which is recognised for its tender texture and superb flavour. This meat literally melts in your mouth.  Choose from  à la carte selections and a 7-course Omakase Menu at HK$1,688+10% per person.

In August, NOBU InterContinental Hong Kong will showcase award-winning Japanese craft beers which are rarely available in Hong Kong.  Enjoy a selection of 10 different labels from Hitachino Nest and Konishi. To pair perfectly with the Japanese craft beers, NOBU Chef Sean Mell and his team have created a selection of tapas style dishes which are inspired by Japanese beer flavours and aromas.

Introducing Premium Miyazaki Wagyu Beef

From July 6-26, NOBU InterContinental Hong Kong will present a selection of dishes made with Miyazaki JapaneseWagyu Beef. Choose from à la carte options including a cold selection of beef tartar, sushi and sashimi and tataki. Alternatively select hot dishes such as Pan-seared Wagyu with Jalapeno Salsa, Oven-roasted Wagyu with Shiso Chimichurri, Sumi Yaki Wagyu with a selection of Nobu sauces or a choice of Sirloin, Ribeye or Fillet. Alternatively, choose the Miyazaki Wagyu Omakase Menu (at HK$1.688 + 10% service).

About Miyazaki Wagyu:

The Miyazaki Prefecture is the 2nd largest producer of Japanese Black cattle. Only the highest quality cattle from this region can be dubbed "Miyazakigyu".

The Miyachiku co-op consists of about 400 farmers spread across the Miyazaki Prefecture. The Japanese farms are unique in that the average amount of cattle that one farmer will harvest at a time is only four. This allows the farmers to pay attention to every detail, take much better care of their animals and focus on each individual animal's needs. 

The animals are fed a diet mostly of wheat and corn for an average of 900 days. This is approximately 8 times longer than most cattle that are consumed in other parts of the world.

Each farmer has his own proprietary feed ratio. While it is a myth that the Wagyu cattle are fed beer and massaged, the farmers are allowed to feed their animals whatever they deem appropriate.

To maintain the high standards of the Miyazaki Wagyu, the Japanese authorities have restricted the supply of the prestigious beef to onlyt authorized distributors. In Japan, restaurants that are allowed to offer Miyazaki Wagyu on their menus are requested to put up an authorization notice in their restaurant. They also have to set-up a designated counter to display the meat. To be an authorized distributor is even more rigorous. 

The Japanese beef grading system has 5 quality grades (A to A5 for marbling, meat colour and brightness, firmness and texture of meat, colour and the luster and quality of fat). 

Miyazaki Wagyu is recognized for its cherry red colour, tender texture and excellent, dense meat taste. The snowflake-like fat is evenly distributed and produces a non-greasy flavour. It begins to dissolve at the temperature of 25 degrees Celsius. This meat literally melts in your mouth.

 

Chill Out with Hitachino Nest & Konishi Japanese Craft Beers

From August 3-30, NOBU InterContinental Hong Kong will showcase a selection of 10 different award-winning craft beers from Hitachino Nest & Konishi. Both craft beers are rarely available in Hong Kong.

NOBU Executive Chef Sean Mell and Executive Sushi Chef Hideki Endo have created a “Japanese Craft Beer Pairing Menu” which includes a selection of savoury and sweet “tapas' style dishes inspired by the great diversity of Japanese beer flavours and aromas.

Selections include Shrimp and Jalapeno (with the tempura batter made with Hitachino white beer), Sancho Dusted Grilled Sea Bass with Truffle Ponzu Dashi (with the fish glazed with beer as it is being grilled) and Wagyu Stone Rice  (with the stone deglazed with the sweet  stout). For dessert, NOBU Pastry Chef  Priscilla Li has created Mini Donuts  which are bacon-infused beignets with caramel anglaise, chocolate sauce, candied bacon and pecan bits and stout Ice Cream.

About Hitachino Nest Beer

Hitachino is the name of the district in which the Kiuchi Brewery is located in a local area known as Kounosu. “Su” means NEST in Japanese. This is how the HITACHINO NEST brand was created.

Kiuchi Brewery began brewing Hitachino Nest Beer in 1996. It drew techniques and inspiration from its heritage of sake brewing and distilling methods. Since then, Hitachino Nest has made a name for itself and has won numerous awards worldwide.

About Konishi Brewery

Konishi Brewery has been brewing beer for 18 years. The beer brewery was created  to promote Itami City after the damage of the earthquake in 1995. Itami City is a sister city of Hasselt City in Belgium, which is renowned for its beer.

Konishi Snow Blanche was awarded a Gold Award for three consecutive years at the European Beer Star Awards . This was a first for Japan and established Shirayuki Beer as a top quality craft beer.
