The dedicated award-winning culinary team behind Carousel has created a contemporary interpretation of the traditional Yu Sheng by including fresh ingredients such as lobster and water chestnuts to add flavour and texture. The Eight Joys of Spring Yu Sheng also boasts eight herbal ingredients such as panax quinquefolius (root of American ginseng), codonopsis pilosula, ginseng candies, salsify, Solomon's seal rhizome, red dates, wolfberries and herbal jelly. These eight ingredients are specially selected by the chefs for their health benefits. The red dates and wolfberries accentuate the sweetness while the salsify and the highlight of the Yu Sheng, deep-fried rice vermicelli, provide a delightful crunchiness. The specially concocted sweet and savoury fragrant sauce of lime juice, plum and orange sauce tops off this health-boosting Yu Sheng, giving you a head start to another blissful year ahead.
 

The Eight Joys of Spring Yu Sheng is available from 21 January 2014 to 14 February 2014, at $138.00 for a small portion (4 to 6 persons) and $168.00 for a large portion (8 to 10 persons).
