'Truffle Month' at Monti Kicks Off With an Australian Winter Black Truffle Menu

To commemorate the peak of the winter truffle season in Australia, the collaboration between Calia Truffles and Monti, will showcase a decadent dinner menu throughout July, using exotic Périgord black truffles (Tuber Melanosporum) sourced from Victoria's Mornington Peninsula, Australia, from a dedicated trufferie with more than 2,600 oak and hazelnut trees.

Based in Shanghai, Chef Francisco has built an incredible reputation with fine dining restaurant NAPA wine bar and kitchen, Alegre restaurant in Chile, and of course 81 Restaurant in Tokyo, where he was awarded one Michelin for the casual fine-dining restaurant serving borderless cuisine. Adding to his accreditation, Chef Francisco also completed his training at Andoni Luis Aduriz's Mugaritz in Spain, and in 2008, he returned to Spain to spend a season at the legendary el Bulli under the direction of world-renowned Chef, Ferran Adrià.

Guests dining at Monti will have the pleasure of enjoying Chef Francisco's menu for two nights only. However, Monti's special truffle dinner menu will include a generous infusion of these exquisite little delights, available until end of July 2017.

 About Chef Francisco Javier Araya

Chef Francisco's cuisine is influenced by his training and experience in Spain, Japan, China and his native Chile. After graduating from culinary school in Chile, Chef Francisco worked at Alma in Santiago before training at Andoni Luis Aduriz's Mugaritz in Spain. In 2007, he returned to Santiago and joined the team at Boragó in Santiago as head chef and creative director for I&D (Innovation and Development), building on the concept developed by Rodolfo Guzman. Francisco created dishes using ingredients indigenous to Chile.

In 2008, he returned to Spain to spend a season at the legendary el Bulli under the direction of Ferran Adrià. Chef Francisco's foundation for avant-garde cuisine was developed here and has worked its way into his culinary style. Upon his return to Santiago, Chef Francisco worked as executive chef of the Spanish Cultural Center. In 2012, he joined two fellow el Bulli alumni to open 81 Restaurant in Tokyo where seasonal Japanese ingredients are integrated into Latin American cuisine. Opening to rave reviews with only 8 seats, 81 quickly became a sought-after dining destination in the world's food capital. It was awarded its first Michelin star in December 2013.

In 2015, Chef Francisco become Executive Chef of the renowned NAPA wine bar and kitchen in Shanghai and at the same time he was selected to be the representative Chef for ProChile in 2015 Asia tour. In late 2016, Chef Francisco was asked to become Consulting Chef at Calia, a unique restaurant-to-retail experience bringing premium Japanese-fusion cuisine to Melbourne
