On Friday March 31, esteemed Australian chef Brett Graham from London's highly acclaimed and awarded The Ledbury will present an intimate dinner at QT Sydney's Gowings Bar & Grill ahead of The World's 50 Best Restaurants Awards.
Born in Newcastle, Graham is arguably the most critically acclaimed Australian chef in the world, with his two Michelin Star-awarded restaurant recently ranking 14th on The World's 50 Best Restaurants 2016 list and QT Sydney will host him for an exclusive and limited private dining experience at Gowings Bar & Grill.
Over a three-course feast with paired wines dished up by the renowned Gowings Bar & Grill team, diners have the chance to hear Graham impart his insights on the local and international hospitality industry in a Q&A moderated by Group Editor of The World's 50 Best Restaurants William Drew.
The bespoke menu designed by QT Hotel's Creative Food Director Robert Marchetti will have a strong focus on local delicacies, showcasing quality Australian produce, kicking off with Sydney rock oysters, nasturtium vinegar with roasted kelp oil; Black Lip abalone sashimi with Jerusalem artichokes; and Hervey Bay scallop, smoked roe, lemonade fruit to start.
Entrée will be an indulgence of Marron crayfish barbequed over mesquite, yellow fin tuna pastrami, umami butter and native succulents.
The star of the show will be the David Blackmore wagyu skirt with wood-fire oven roasted Australian wild mushrooms, black garlic and malt.
To finish, diners will delight in Meyer lemon soured cream and curd, almond ice cream, frangipane, nougat and citrus marmalade.
