In our continuing cocktail series showcasing unique spirits from artisanal distilleries from around the world, our resident mixologist Sabrina Cantini-Budden showcases FOUR PILLARS Gin from Australia's Yarra Valley for her artisanal cocktail creations now through May 31.
Two of the FOUR PILLARS Gin Cocktails are made with FEVER-TREE Tonic, that includes “quinine” which is used to cure Malaria, a disease transmitted by mosquitoes, which kills one child every two minutes.
For every photo of a cocktail with FEVER-TREE Tonic that you upload on Instagram using the hashtag #MALARIAMUSTDIE, FEVER-TREE will donate HK$50 to Malaria No More UK to help erase Malaria. To learn more, click here.

Our mixologist Sabrina Cantini-Budden has selected the following gins for her Four Pillars Cocktails:
Rare Dry Gin
Four Pillars Rare Dry Gin is crafted to deliver the best of all worlds: a perfect, classic gin and also something that would fascinate and delight even the most hardened gin fanatic. It's spicy but with great citrus, resulting from the usual usage of whole orange, a truly modern Australian gin.
Rare Dry Gin has been awarded three double gold medals at prestigious international competitions: the New York World Wine & Spirits Competition 2017, and the San Francisco World Spirits Competition in 2016 and 2014. It also received a Gold Medal at the Global Gin Masters 2016, and a Gold Medal at the Hong Kong International Wine & Spirits Competition 2014.
Spiced Negroni Gin – Bartender Series
Cameron (Four Pillars' distiller) and Jason (who was then Manager of Sydney bars including The Rook and one of the World's Top Ten Bartenders) wanted to create a gin specifically for the Negroni - something to cut through the Campari and vermouth. And as the Negroni has always been a favourite at Four Pillars, Cameron jumped at the chance to make the first collaboration in its Bartender Series a tribute to the Negroni.
Four Pillars Spiced Negroni Gin is a highly aromatic, rich and spicy gin with great power and intensity. This is one of the most unusual spices in the world, with clove and Sichuan characters. It uses beautiful organic blood oranges in the botanical basket, as well as some ginger. These wonderfully fragrant fresh botanicals help lift the spice to another level.
Spiced Negroni Gin has been awarded Master status at the Global Gin Masters two years in a row (2017 and 2018).
Bloody Shiraz Gin – Limited Release
This limited release combined the signature Rare Dry Gin with some of the best Shiraz grapes in Australia to create its Bloody Shiraz Gin, carrying really beautiful purples and reds to bottle. Flavour-wise it's showing dark fruit, red berries and spice. There is also plenty of classic Yarra Shiraz white pepper and a ginny character with grape aromas, making it unmistakably gin. The palate is lovely and sweet, with long juniper and spice characters to finish.
Chardonnay Barrel Gin
This is the seventh solera release from original chardonnay barrel solera. These barrels were originally used for maturing Yarra Valley Chardonnay for six to eight years prior to being filled with Rare Dry Gin. The preserved ginger character is amazing and sits nicely with crushed coriander and preserved citrus notes. The oak continues to contribute to colour and sweetness, weight and texture. It's a balanced, sippable drink. The botanical oils developed and changed dramatically, whilst still remaining distinctively gin. The juniper base became more textured, while the spices showed developed intensity and fragrance.
