The Tasman Partners With Lark Distilling & Two Tonne Tasmania to Offer a Uniquely Tasmanian Epicurean Experience, Exclusive to Hotel Guests

Hobart, May 2022 – The Tasman, a Luxury Collection Hotel, Hobart announces an exclusive partnership with two of Tasmania's finest beverage producers, Lark and Two Tonne Tasmania, with a collaboration designed to offer guests of Hobart's newest luxury hotel a taste of the island's local epicurean highlights.

Hobart-based Lark is home to Tasmania's First Single Malt Whisky and celebrated as Australia's first Certified Carbon Neutral Distillery, crafted by an award-winning team. The Tasman is proud to partner with this iconic Tasmanian brand, who have created The Docks Lark Single Malt Whisky exclusively for and inspired by the hotel.

The Lark Single Malt Whisky was matured in ex-port casks, then finished in Muscat, offering a cosy and heart-warming dram with just a touch of the unexpected. Lark Distilling also has a personal connection with the legacy of The Tasman site, as Bill & Lyn Lark, Co-Founders of Lark Distilling, and pioneers of the Tasmanian whisky industry, worked in the former Lands Building facing St David's Park. Lyn was a Survey Draftsman for approximately 18 months during 1975 and 1976, while her husband Bill was a Survey graduate in the late 1970's working for a local survey firm. At the time, all surveyors took their survey chains to the basement of that old Lands Building, today the location of Mary Mary, cocktail bar and spirits library, to be standardised annually.

Meanwhile, Ricky Evans' thoughtful approach to winemaking in the Tamar Valley, East Coast and Southern Tasmania, has garnered Two Tonne Tasmania a reputation for producing some of Tasmania's most coveted, small batch wines. Ricky has created a subregional blend specially curated for The Tasman, drawing on a smaller barrel selection of Tamar Valley fruit. According to Ricky, “this exciting partnership embodies the very best of a small producer teaming up with a reputable hotel brand, making local Tasmanian wine-making accessible” and offering guests a taste of his modern take on Pinot Noir.

 The Docks Lark Single Malt Whisky and Two Tonne Tasman Pinot Noir will each be beautifully presented with a unique co-branded design, incorporating The Tasman's rope graphic – a nod to the hotel's nautical history. On an experiential level, guests will also have exclusive access to both cellar doors - an extension of the hotel's commitment to showcasing the epicurean experiences that make Tasmania unique.

According to Anthony Tran, Director of Food and Beverage: “this partnership offers a natural alignment with our wider F&B offering, including an exciting Clefs d'Or concierge, unlocking exclusive producer visits on the island. Highlights include an apple brandy tasting, house aged in freshly coopered barrels made-to-order, hosted within the captivating historic spaces to be discovered at The Tasman.” 

This whisky and wine partnership is the first of many special partnerships between The Tasman and a network of local Tasmanian producers, who were engaged to realise every detail of the hotel from the artwork in guest rooms and suites, to the amenities, and ingredients at the signature restaurant, Peppina.
