InterContinental Hong Kong's popular STEAK HOUSE winebar + grill continues its series of exclusive specialty beef promotions showcasing top quality beef from artisanal farms around the world.

From May 7 – June 30, enjoy a selection of specialty menu items featuring French Limousine beef, one of the oldest and best cattle breeds in France. The cattle are raised in the isolated Limousin region of France where they are exposed to minimal outside genetic interference and are milk-fed for the first 8 months. The result from these highly muscular cattle is beef that is very tender with  balanced marbling. It is also low in saturated fat.

The selected cuts showcased at THE STEAK HOUSE winebar + grill are from cattle bred at the Lacaune Farm in the Limousin Region. It is an organic farm which has been operating for three generations. A maximum of 30 cows are slaughtered each month to ensure a zero disturbance in the herd of just 350 cattle. All showcased Limousine beef had been dry-aged for three weeks.

The History of Limousine Cattle

The Limousine cattle may be as old as the European continent itself. Cattle depicted in cave drawings estimated to be 20,000 years old in the Lascaux Caves near Montignac, France have a striking resemblance to today's Limousine cattle.

Limousine cattle originated in the West of the Massif Central between Central and South West France, a rather rainy region with harsh climatic conditions and poor granite soil. Consequently, the growing of field crops was very difficult and an emphasis was placed on animal agriculture.

As a result of their environment, Limousine cattle have a large and strong boned frame and have evolved into a breed of unusual sturdiness, health and adaptability. The lack of natural resources also enabled the Limousin region to remain relatively isolated; and the farmers have been free to develop their cattle with little outside genetic interference.
