THE STEAK HOUSE winebar + grill at InterContinental Hong Kong continues its “Quest for the World's Best Beef” with the highest quality beef sourced from artisanal farms around the world.
From November 4 – December 30, the hotel's Executive Chef Maxime Luvara and STEAK HOUSE Chef Chiu Ming Chan present IGA Japanese Wagyu from 100% pure-bred Black-haired Wagyu (Kuroge), Japan's highest quality beef, which is renowned for its fine grain and marbling, tender and juicy texture, rich melt-in-your mouth taste and superb aroma.
About Iga, Japan
Iga is located in the northwest part of the Mie Prefecture, adjoining Nara and Kyoto. Surrounded by mountains and interlaced with numerous rivers, with an ideal temperature, it is perfect for raising cattle. With the famous Akame 48 Waterfalls and Lake Biwa (the largest lake in Japan) located in Iga City, the water in Iga is pure, clean and full of nutrients and minerals from the waterbed of the rivers. Its top quality water is ideal for growing rice, making Sake and raising IGA Wagyu.
Iga was the hometown of Ninja warriors during the Edo period (1603 – 1868).
About IGA Wagyu
With a history of over 700 years, IGA Wagyu provided the Ninja warriors with high-quality protein. It has been awarded the Grand Champion (“Yokozuna”) of meat.
The IGA Wagyu featured on our STEAK HOUSE menu comes from the largest Wagyu farm in Iga, which has over 100 years of experience raising Wagyu. The owner, who is the 3rd generation in his family to raise IGA beef, uses both breeding and fattening techniques along with an excellent management system. His breeding and fattening farms raise 600 cattle per year, which are all 100% pure-bred Japanese Black-haired Wagyu (Kuroge), which is Japan's highest quality beef. The farm's unique feeding recipe includes 22 kinds of crops and grains to provide balanced nutrition
for the Wagyu female cattle.
The result is a superb beef with fine and intense marbling and extremely tender texture.
It has a distinctive sweet beef flavour and creamy and juicy taste and a unique aroma and melt-in-the-mouth sensation.
