Perched on the apex (Level 8) of The Fullerton Hotel Singapore, The Lighthouse Restaurant & Rooftop Bar unveils a new concept rooted in "Cucina Costiera" or authentic Southern Italian cuisine with specialties and quality produce from gastronomy rich regions like Campania, Sardinia and Sicily.

A destination establishment that offers a multi-layered experience with an intimate-sized dining room and an adjoining rooftop bar, The Lighthouse Restaurant & Rooftop Bar occupies the exact location where a beacon used to guide the world's mariners to the safety of the Singapore port in the eighteenth century. Today, it commands one of the most mesmerizing views of the Singapore skyline and Marina Bay waterfront from atop The Fullerton Hotel.

Drawing inspiration from Italy's Amalfi Coast where he grew up, The Fullerton Hotel's General Manager, Mr. Giovanni Viterale charts a fresh culinary direction for The Lighthouse which is befitting of its location at the mouth of the Singapore River.

Its new cuisine style reflects the rich fishing history of Southern Italy and its abundance of renowned gourmet products including buffalo mozzarella, burrata, sheep ricotta, marinated olives, sun dried tomatoes, lemons as well as aromatic wild herbs like rosemary and oregano. 

Incorporating these ingredients and the new culinary philosophy, The Lighthouse's latest signatures include The Lighthouse Antipasti Platter which is a tantalizing combination of Imported Buffalo Burrata from Adria with Heirloom Tomatoes, Sweet Basil and Extra Virgin Olive Oil, Crispy Fried Seafood with Smoked Pepper Sauce, 18 Months Langhirano Aged Ham with Grilled Smoked Scamorza Cheese and Preserved Eggplants, and Sweet Half Maine Lobster Dressed in His Coral with Styles of Roasted Peppers and Basil Salad.       

Specialty main courses include hearty homemade pastas and fresh seafood dishes that will call to mind the glorious landscapes of Southern Italy. Tastefully presented with enticing aromas and colours are Gragnano's Paccheri in Naples Style with Tomato Braised Beef Ragout and Ricotta Cheese Flakes, Homemade Tagliolini with Amalfi's Lemon Sauce and Lightly Spiced Prawns, Sea Rock Style Risotto with Langoustine, Crab, Mussels, Clams, Tomato and Parsley and Roasted Whole Seabass with Fresh Aromatic Herbs and Emulsion of Sicilian Lemons.

Desserts, complemented with Italian wines and cheeses, will complete the dining experience at The Lighthouse. The selection include classic Italian favourites like Zibibbo Sabayon with Marinated Strawberry and Traditional Baba, Traditional Tiramisu with Island Marsala Wine and Mascarpone Cream, and Sicilian Cannoli and Ice Cream with Chocolate Chips, Ricotta Cheese and Candied Fruits.                                                 

Furbished in refreshing hues of vibrant orange and earthy tones, the 52-seat restaurant offers a warm ambience for Italian cuisine. A specially-designed range of mirror panelling emphasizes the unrivalled views of the Marina Bay waterfront from all angles of the restaurant.

The Lighthouse Rooftop Bar's atmospheric setting makes it perfect for special occasions with nightly views of the Marina Bay Light Show as well as the city's spectacular fireworks display on National Day and New Year's Eve. Providing an elegant Italian bar experience, guests may enjoy a choice selection of quality Italian wines, aperitifs, cocktails and tapas while soaking in the panoramic views of the Singapore skyline - where delicious stuzzichini such as Roman Style Baby Lamb Chop with Tomato Relish, Burrata Cheese with Tomato Fondant, Basil and Croutons and Squid Ink Rice with Shrimps and Saffron Aioli can be paired with handcrafted Italian style cocktails like Lights Up, a rich espresso martini with sambuca on fire and Alba Adriatica, a vodka-based concoction with campari, limoncello and orange juice.
