Hairy Crab season has arrived, much to crab lovers' delight! Chinese Executive Chef Hin-Chi Siu at The Langham, Hong Kong, has used seasonal hairy crabs from the famous Yang Cheng Lake to create seven new dishes and a sumptuous set menu. The hairy crab menu will be available from 1 October to 30 November at T'ang Court.
Chef Siu specializes in seafood dishes and is extremely skillful at cooking hairy crab. To honour this year's hairy crab season, Chef Siu uses different ingredients and cooking methods to bring out the quality of the hairy crab. He has designed an array of new innovative dishes featuring hairy crab to enchant the connoisseurs.
Recommended dishes include stewed turnip rings stuffed with shrimp paste and topped with bird's nest, accompanied by bean curd filled with shrimp paste, hairy crab meat and roe topping - a signature item that matches the freshness of shrimp with the full flavor of crab roe. You must also try stewed prawns with Chinese kale, hairy crab meat and roe. Using the tenderest part of Chinese kale which is in season, the dish is infused with the aroma and taste of Chinese kale and crab. Stewed Inaniwa noodles with diced garoupa, scallops, hairy crab meat and roe give a contrasting texture.
In addition, T'ang Court will introduce a lavish hairy crab set menu, so crab lovers can enjoy a seasonal crab feast, complemented with the restaurant's array of tempting dishes. The set menu includes braised imperial shark's fin with bird's nest, hairy crab meat and roe, sautéed sliced garoupa with conpoy, Chinese kale and water chestnuts, steamed hairy crab (each weighing around 280g), steamed egg white and soya bean milk with shrimps, hairy crab meat and roe. Priced at HK$1,650, subject to 10% service charge.
