Sydney Common, located within the prestigious five star hotel, Sheraton Grand Sydney Hyde Park, is set to host one of Australia's most iconic wine families, Tyrrell's Wines, for an exclusive one-night-only dinner on Tuesday 20 May, bringing together leading culinary talent and one of the Hunter Valley's most celebrated producers.

The event will be hosted by Andrew Spinaze, Chief Winemaker of Tyrrell's Wines, offering guests a rare, behind-the-scenes perspective on Tyrrell's acclaimed vineyards, vintages and signature styles.

The evening will showcase a five-course menu by Sydney Common Executive Chef Allen Varghese and Chef Lisa Shin, designed to hero seasonal, wood-fired cuisine alongside a curated selection of Tyrrell's wines. From highly regarded single-vineyard expressions to the depth and precision of the Winemaker's Selection range, each pairing has been crafted to highlight the character and legacy of the winery.

Expect a progression of dishes that balance refinement with bold, native-led flavour, from delicate Abrolhos scallop tartlets with kabosu and togarashi, to yellowfin tuna tartare layered with sheep's milk labneh and nori. Mains lean into the restaurant's signature woodfire, with options such as Margra lamb neck with saltbush and charred pumpkin or richly marbled 2GR wagyu blade finished with kombu butter and mountain pepper, before closing with a reimagined sticky date soufflé, elevated with smoked red gum caramel and wattleseed ice cream.

Guests will be welcomed with a glass of Tyrrell's Blanc de Blancs on arrival before progressing through a multi-course dining experience, with Spinaze guiding each pairing throughout the night.

Two distinct menu experiences will be available:
● Single Vineyard Menu - $185 per person: A showcase of Tyrrell's Single Vineyard wines, paired with selected Winemaker's Selection reds.
● Winemaker's Selection Menu - $225 per person: Featuring some of Tyrrell's most iconic and awarded wines, including flagship releases from the Winemaker's Selection range.

Both menus include five courses with matched wines, beginning with sparkling on arrival and concluding with Tyrrell's signature red varietals.
