On Tuesday, November 5th SPOON by Alain Ducasse will partner with Champagne Fleury Pere & Fils for a special Champagne Pairing Dinner.
Enjoy a 5-course contemporary French dinner menu by Executive Chef Philippe Duc, exquisitely paired with 6 vintages of Champagne Fleury, best known for its biodynamic* pinot noir-based Champagnes with strong personalities. (HK$1,888 + 10% service per person).
Ms. Morgane Fleury, Ambassador / Winemaker, will personally be on hand to introduce her family's Champagne.

About Champagne Fleury
Champagne Fleury is located on the Côte des Bar within Champagne's “other” grape-growing area known as the Aube. Its steep slopes are home to some of the area's healthiest pinot noir vines which are cultivated by the Fleury family in Courteron. The village is close to the Cote d'Or border, with the grapes having the supple texture and floral character of some of Burgundy's cooler climate. Back in 1900 Emile Fleury was the first in Champagne to plant pinot noir grafted on American rootstock. In 1989 Jean-Pierre Fleury, an advocate of holistic agriculture, began Champagne's first biodynamic winemaking, with all of the family's vineyards becoming biodynamic by 1992. Following that, other growers in Courteron adopted biodynamic practices. In 1996, Champagne Fleury doubled its production from 100,000 to 200,000 bottles through the purchase of grapes from fellow biodynamic winemakers.
Today, Jean-Sebastien and Morgane Fleury run the estates with their father Jean-Pierre on hand to share his experience and advice. The wines are fermented in oak, riddled by hand and slowly matured under cork. When paired with the vineyard's natural methods, the wines retain firmness and freshness as they age.
Champagne Fleury works with "Renaissance des Appellations", a group of winemakers specializing in Biology-biodynamics, who help to build awareness of biodynamic wines.
* Biodynamic wines are wines made using the principles of biodynamic agriculture. Biodynamic refers to both the agricultural methods and the handling and processing of the fruit post-harvest. In farming, biodynamics embodies the ideal of ecological self-sufficiency as in modern agro-ecology, but with ethical-spiritual considerations. This type of viticulture views the farm as a cohesive, interconnected living system.
