The stunning Air Bar, which is literally perched on the cliff - appearing to 'float' above the Gulf of Thailand, provides a sophisticated, yet relaxed setting from which to sit back and soak up one of the best views on Koh Samui.

 

Every Sunday, a high-octane Teppanyaki Sushi and Sake Night offers guests fresh local seafood, premium meats and vegetables artfully prepared live by Master Khun Neung, also known as Number 1, directly in front of the guests.  The Teppanyaki is served alongside freshly prepared sushi, rolled maki and free-flow of Sake.

 

Following dinner, retreat to the comfortable Thai-style seating for a digestif to sample Air Bar's innovative tipples.  Their signature cocktail, Ginger Pomelo Margarita is made using fresh Thai ginger and locally produced pomelo, mixed with Don Julio tequila and home-made grapefruit syrup topped with tequila pomelo air whilst the other, a Watermelon Martini consists of freshly juiced Thai watermelon shaken with Ketel One vodka and honey, served in a chilled Martini glass and finished with a layer of aromatic Basil fog.   

 

Alternatively, opt for one of the molecular cocktails such as Deep Freeze which transforms select cocktails from the menu by using a unique espuma method combined with a liquid nitrogen bath, and served at a temperature below zero for a refreshingly new take on the drinks.

 

Set amid 22 acres of lush coconut plantation on the island of Koh Samui, InterContinental Samui Baan Taling Ngam boasts 79 guest residences, 7 swimming pools, a private beach, licensed pier, gourmet dining and its signature Baan Thai Spa, raised 120 meters above sea level.
