The Cavendish Hotel at Baslow, set on the Chatsworth Estate, is presenting a whole new take on 'kitchen sink drama'. Thrilling dining in the heart of the kitchen has been offered at the hotel for well over 20 years - long before it became popular with celebrity chefs - but it was just limited to two people. Now, following a complete makeover by Yorkshire designer Rachel McLane working for the Duchess of Devonshire, four diners can book the exclusive Kitchen Table amid all the hustle and bustle of a busy night's service. This 'royal box', complete with air conditioning and atmospheric lighting, allows diners to take in the theatre of the kitchen whilst indulging in a five-course gourmet experience.
The evening starts with a glass of Laurent Perrier Champagne and canapés, followed by chef Mike Thompson's surprise menu, five courses of exquisite food created and cooked exclusively for Kitchen Table diners. The menu can be matched with a flight of specially selected wines to complement each course or diners can select from the 80 bin wine list.
The five-course bespoke dinner available for up to four diners, including Champagne and canapés on arrival, is £85 per person. The flight of wines is good value at £29.95 per person.
Having experienced the buzz of the busy kitchen and a bespoke dinner, it only leaves diners to retire to one of the newly refurbished bedrooms for the night. Full county breakfast the following day is served in the Gallery Restaurant where, subject to availability, guests are offered a window seat to enjoy the views across the Chatsworth Estate.

Notes:
The historic property in the pretty yet bustling village of Baslow was originally the famous Peacock Inn, owned by the Duke of Rutland, although it is uncertain exactly how old it is. The hotel became part of the Duke of Devonshire's estate around 1830 and in the early 1970s was restored and restyled as the Cavendish Hotel.
The Duchess of Devonshire oversees the design of the interiors which blend contemporary design and comfort with historical features. There are over 300 original drawings, paintings, pieces of fine art and modern graffiti from the Devonshire Collection.
There are two restaurants - the Gallery Restaurant which has continuously held 2 AA rosettes since 2006, and the light and airy Garden Room. The Kitchen Table provides diners with a thrilling dining experience in the heart of the kitchen – a table for four where diners will enjoy a bespoke menu and can see for themselves what truly takes place whilst soaking up the atmosphere of a busy night's service.
There are 23 bedrooms and one suite – each with its individual theme and design including original art. Ongoing refurbishments include redesigned rooms in the main house by Rachel McLane in conjunction with the Duchess of Devonshire in 2014 and January 2015.
All rooms and both restaurants offer views out over the countryside.
There is also a private room for luncheons, dinner parties and meetings.
Outside the gardens are predominantly lawns leading out towards the parkland - the centrepiece is a contemporary piece of sculpture. There is an extensive south facing terrace with seating.
The hotel's location is ideal for sight-seeing and exploring. As the closest hotel to the House and Garden at Chatsworth, it is just a 20 minutes' walk across the fields and park. The Derbyshire Dales with all their attractions are right on the doorstep.
The Cavendish is available for exclusive use and as a venue for special celebrations.
The General Manager since 2001 is Philip Joseph.
The Head Chef since 2011 is Mike Thompson.
A 5% service levy is added to all accounts and distributed directly to staff.
