Overseeing the culinary team at Hansar Samui, Canadian Executive Chef Stephen Dion has an exceptional pedigree.  A unique opportunity to be the Private Chef to His Majesty the King of Jordan became a turning point in his career and he spent two years catering for the Family, as well as high profile dignitaries, VIPs and visiting Royalty including the Sultan of Brunei and Prince Charles to name a few.  Stephen has created a unique and epicurean experience for resort guests, where they can appreciate exquisite French Mediterranean Cuisine, as well as the authentic Thai menu at the beachfront H Bistro restaurant.  Menu highlights include fresh Maine lobster and oysters flown from Canada, Japan and France, complemented by a carefully handpicked list of International wines and champagnes.

 

In addition he has created a romantic six course dinner menu for two, which is served in an exquisite beachfront cabana setting with flame torches and candlelight.  The following menu is available either with paired wines with each course, or without as preferred.
