For a traditional Chinese New Year's Feast of award-winning Cantonese cuisine by Executive Chef Lau Yiu Fai on February 6, the 2-Michelin star Yan Toh Heen presents an 8-course set dinner at HK$2,988 per person.
Chef Lau's Fireworks Dinner menu includes a starter with Barbecued Suckling Pig, Crispy Roll with Sea Moss, Golden Lobster with Spicy Salt and Wok-seared Sun-dried Oyster. This is followed by Double Boiled Sea Cucumber with Fish Maw and then Braised Whole Abalone (28 Heads) in Oyster Jus. Next is Steamed Eastern Star Garoupa Fillet with Yunnan Ham and Wok-fried Wagyu with White Fungus and Winter Bamboo Piths. This is followed by Braised E-fu Noodles with Hokkaido Scallops and Crabmeat Roe. For dessert, Sweetened Red Bean Cream with Glutinous Rice Dumplings and Chilled Red Date Pudding with Bird's Nest served with Wuyi Supreme Tea.
Yan Toh Heen Chinese New Year Fireworks Dinner Menu
The special "Fat Choy" menu (HK$1,888 per person) which includes traditional Lunar New Year delicacies is available from February 5 – March 3, 2019 (except the Fireworks Night on February 6).
The 5-course menu features Barbecued Suckling Pig, Golden Sun-dried Oyster and Crispy Lobster with Spicy Salt, followed by “Buddha Jumping Over the Wall” (a special Chinese New Year dish of Double Boiled Abalone, Fish Maw, Sea Cucumber, Conpoy, Morchella, Bamboo Piths, Mushrooms, Black Chicken and Sea Moss in Soup). Next is Wok-fried Wagyu Beef and Duck Liver with Spicy Sauce served on a Hot Stone, followed by Fried Rice with Carabinero Shrimp Roe with Air-dried Meat and Salty Egg. For dessert, Sweetened Red Bean Cream with Sesame Dumplings and Bird's Nest served with Wuyi Supreme Tea.
During the month of February, enjoy the auspicious Chinese New Year “Lo Hei” Dish (HK$688).
Ingredients in the traditional “Lo Hei” toss include Cold Jelly Fish, Shredded Abalone, Fish Maw, Sea Cucumber, Roasted Duck, Honeydew Melon, Pomelo, Mixed Bellpeppers, Turnips, Carrots, Chopped Pine Nuts, Homemade X.O. Chili Sauce and Sesame Yuzu Dressing.
Throughout February Yan Toh Heen is showcasing another traditional Chinese New Year dish comprised of auspicious premium ingredients: Braised Whole Abalone, Sea Cucumber, Fish Maw, Conpoy, Sun-dried Oysters served in a Casserole (HK$988 per person).
Rech by Alain Ducasse
The 1-Michelin star Rech by Alain Ducasse celebrates Chinese New Year with a 5-course Fireworks Dinner (HK$1,988 per person) by Executive Chef Stéphane Gortina who found inspiration from traditional Chinese New ingredients (such as suckling pig, cabbage and tangerines).
The dinner starts with a Seafood platter for two to share, with Langoustine, pink shrimp, Fine de Claire n°2, Creuse spéciale n°2, hard clams and whelks. Next is a Cookpot of Black Quinoa, Shellfish and Crustaceans, followed by Line-caught Sea Bass, Stuffed Cabbage, Civet Sauce. This is followed by Suckling Pig, Celeriac and Black Truffle, then our famous Camembert. For dessert, Pastry Chef Thomas Moulin has created a special Tangerine dessert made with fresh tangerine, marmalade, vanilla cream and orange glaze.

On February 6, NOBU InterContinental Hong Kong will showcase its innovative new-style Japanese cuisine with an 8-course menu at HK$1,688 per adult (6:00pm-11:00pm).
The Chinese New Year Omakase menu starts with dishes by Executive Sushi Chef Kazunari Araki including O-Toro Sashimi with Aoume Purée and Tamago Dressing and Aburi Ise Ebi Sashimi with Caviar, Umami Matcha Sauce and Zuwai Kani, Uni & Ikura, with Nori Taco, Quinoa Shiso Salsa. This is followed by a whole Ezo Awabi with Truffle Foie Gras Miso and Kue Sashimi with Aji Amarillo, Next is a Deluxe Sushi Assortment, followed by Poached King Crab with a Lobster Dumpling and Lobster Miso Broth. This is followed by Butter Crusted Sea Bass Fillet with Yuzu Truffle Soy and Smoked Miyazaki Wagyu with Shitake Sweet Onion Soy and then Soba Noodles. For dessert Pastry Chef Joanna Yuen has created a “Jade Sphere” made of lime, mint, shiso and budo, with a garnish of peach blossom for good luck in the New Year.

Yusheng, which literally means "raw fish" is considered a symbol of abundance, prosperity and good health. Consequently, the tossing of the Lo Hei at Chinese New Year is auspicious.
