(Hong Kong, 9 January 2018) – Chinese New Year is the first and the most cherished occasion in the Chinese calendar. To welcome the Year of the Dog, The Langham, Hong Kong has prepared opulent holiday-inspired offerings, inviting guests around the world to share the joyful spirit of this traditional festival.
Welcoming every guest is an impressive 12-feet tall peach blossom that takes the centre stage at the hotel lobby. Other public areas and T'ang Court restaurant are also decorated in a rosy pink tone with peonies, pink orchid and golden butterfly motifs to ring in the festival.
T'ang Court
As one of only four Cantonese restaurants worldwide to receive the coveted Three Michelin Stars, T'ang Court is elevating the jubilation to majestic new heights. Chinese Master Chef Kwong Wai Keung and his talented team are giving a luxury spin to the festive menu by picking the world's top quality ingredients in season. The Chinese name of each dish refers to a Chinese New Year blessing to spread good fortune to all patrons.
The giant scarlet lobster head gives an eye-catching presentation for Stir-fried Sliced Fresh Lobster with Mixed Mushrooms and Conpoy, symbolises good health and vigor along with the name of the delicacy. Medium-sized local lobster is used for its tenderness and intense flavour, with deep-fried Hokkaido dried conpoy shreds on top to give a flash of gold and crisp.
For those who anticipate a new year with good health and wealth should not miss Braised Bird's Nest with Crab Roe and Alaskan Crab Meat. A generous portion of premium bird's nest from Indonesia is first stewed in chicken broth and decorated with perfectly poached creamy crab roe. Bird's nest has long been prized for enhancing skin and body complexion.
Chinese like wordplay to convey lucky messages during Chinese New Year. The Chinese name of the dish Stewed Sliced Abalone Filled with Asparagus and Shrimp Paste, accompanied by Bêche-de-Mer consists of the word “wrap”, which refers to the thin abalone slice wrapping emerald asparagus and home-made shrimp paste, while also carries the auspicious meaning of promising prosperity. The wrap and a whole Japanese Kanto sea cucumber are then braised in the abalone sauce containing conpoy, Yunnan ham, chicken and pork for 15 minutes.
Besides, T'ang Court is launching bountiful dim sum selections for family reunion in this precious occasion of a year. The culinary team is innovatively expanding the Pantone of the Chinese New Year to black this year with the extravagant creation of Steamed Shrimp and Bamboo Charcoal Dumpling topped with Sliced Lobster and Black Truffle. Bamboo charcoal powder is seen as a healthy ingredient because of charcoal's ability to absorb toxins and purify. It is added to the dumpling skin to make a black crust. Italian black truffle is freshly shaved on the top as a final touch. More Chinese New Year specialties such as the conventional Golden-fried Minced Yunnan Ham and Egg Fritters are also available.
The exclusive Chinese New Year menu will be offered during the first to the seventh day of the lunar calendar from 16 to 22 February 2018. Dim sum selections will be served during lunch period only.
Perfect for gifting, the New Year would not be completed without T'ang Court's legendary homemade puddings prepared in traditional way. These delicacies bring good luck, while satisfying sweet and salty cravings. The festive flavours include the sought-after Turnip Pudding with plentiful sweet turnip hand-shredded by the chefs, the classic New Year Pudding and the Taro Pudding filled with conpoy and dried shrimp – all crafted with only the finest ingredients and perfect to be shared with family and friends to welcome a fruitful year.
