Sitting in the heart of the Rocks, Pier One Sydney Harbour is the city's chicest waterfront hotel and the newest addition to a growing ensemble of remarkable and boldly original independent hotels in the Autograph Collection.

Offering delightfully unexpected and thoroughly satisfying one-of-a-kind curated stays Pier One Sydney Harbour is about to embark on a seventeen-week beautification process to improve its already exceptional lobby, dining and bar facilities. As the hotel transitions through this exciting period including the appointment of a celebrity chef, General Manager Kim Mahaffy has seized the opportunity to invite Executive Chef Chris Dodds to showcase his culinary expertise for a four week residency.

From 10th July for a limited time only, hotel guests and Sydney-siders alike will have the opportunity to taste Chris's award-winning dishes. Currently Executive Chef at the popular Renaissance Phuket Resort & Spa, and with over 17 years of experience, Chris is looking forward to bringing his global gastronomic knowledge and passion home to Pier One.

Chris will be instrumental in supporting us through the next phase and we look forward to welcoming him to our team and for him to showcase his culinary flair with the multitude of seasonal and diverse native ingredients Australia has to offer' says Kim.

From humble beginnings in a small town in remote northern Queensland, Chris has travelled far. After perfecting his craft under Steve Szabo at Palazzo Versace, he moved to The Club in Malaysia to develop his skills, exploring novel ways to incorporate exotic foods into his repertoire. Continuing on to Abu Dhabi, Chris had the fortune to cook for Emirati royalty. You would think that this would be the highlight of his time in the UAE, but he most enjoyed working with renowned chefs such as Paco Roncero, Janice Wong and George Colombaris.

'It's a very exciting opportunity for me to return to Australia and be a part of the journey that Pier One is undergoing. I look forward to bringing the flavours of Asia and combining them with fresh local produce to create innovative dishes, and showcase a globally inspired menu over the coming months' comments Chris Dodds.

Chris's time at Pier One will be an integral part of the hotel's global positioning moving into the final phase of the immersion into the Autograph Collection. Pier One Sydney Harbour is delighted to have him on board during this time of significant change with guests able to taste his dishes during his time here in Sydney.

The beautification process at the hotel will be carried out in stages with the new lobby and bar being the first areas to be completed. To ensure a smooth transition and minimal guest interruption the hotel reception will be relocated to the Bridge Room on level 2 for 8 weeks starring Monday 7th July - guests will enter the hotel via Lower Fort Street instead of Hickson Road.
