Inner City urban sanctuary, PARKROYAL Darling Harbour, Sydney is delighted to welcome John McFadden to the position of Executive Chef, PARKROYAL Darling Harbour overseeing operations in the award-winning ABODE Bistro & Bar, the in-house menu, as well as the Club Experience and the heritage named BARKERS Restaurant. Australian born and trained, McFadden has over 35 years in the food industry bringing with him invaluable experience, an unbridled passion for his craft and innovative culinary creations made from locally sourced, sustainable and seasonal produce.
McFadden moved quickly through the ranks with postings at notable restaurants including the Two-Hatted Grand Fine Dining Room at the Windsor Hotel, Hayman Island and Xu Bistro at the Hyatt Regency. He is perhaps best known for his ten years as Group Executive Chef at the Trippas White group.
