Experience a Taste of Catalonia with Avant Garde Spanish Cuisine at Girandole

Park Hyatt Tokyo welcomes Michelin star chef Ram�n Freixa Riera of El Rac� d�en Freixa in Spain to Park Hyatt Tokyo�s European brasserie, Girandole, for a week of Spanish haute cuisine offering a menu of re-interpreted traditional dishes between July 9 and 15, 2008. The tasting menu will offer a selection that blends classic Catalan traditions with contemporary flair in such dishes as Chocolate with Foie Gras and Corn, and Duck Hamburger with Cereal Bread, Candied Red Onion and Mustard Ice-Cream.

Ram�n�s style is highly creative and one that is �based on technique, product and feeling.� The combination of all three results in an honest cuisine, conceived from the heart of the chef, who mixes traditional and avant garde, technique and creative expression, research and soul, professionalism and love of cooking. Ram�n�s passion is demonstrated by his continuous experimentation and creation of new, innovative and surprising recipes. His cuisine has personality, is contemporary and is closely linked to Barcelona. In 2007, Gourmetour Guide named Ram�n Freixa Riera �Best Chef of the Year� and awarded El Rac� d�en Freixa as �The Best Restaurant� and �The Best Welcome and Service�.

About Ram�n Freixa Riera

Ram�n�s passion for cooking came from his maternal grandparents, who were bakers, and his father, a restaurateur. After studying hotel management and hospitality in Barcelona, he travelled and worked around Europe. In Belgium, he worked at La Cuisine des Anges, La Truffe Noire and Comme Chez Soi. In France, he learned even more at Laguiole and at Restaurant Michel Bras. In 1994, he returned to Barcelona to join his father in the kitchen of El Rac� D�en Freixa, which was awarded one Michelin star in 1988. On his father�s retirement in 1998, Ram�n took over the restaurant and also wrote his first book of recipes, �El pa, l�oli i el vi�. He has maintained the restaurant�s Michelin star every year and, in 2001 and 2007, the Gourmetour Guide named him �Best Chef� and his restaurant �Best Restaurant in Spain�. He also manages the Mesana restaurant of Marbella, which was awarded with a red Michelin star in 2007.
