The flavours of New Orleans cuisine will take over radii restaurant & bar, Park Hyatt Melbourne's award-winning restaurant, for 'Taste the Big Easy' feasting-style dinners on Friday 11th October and Saturday 12th October, 2019.

Culinarian and former chef Stephen Torres will lead a team of skillful chefs and mixologists visiting from the southern US state of Louisiana. His impressive resume includes stints at the only Michelin Guide 3-star restaurant in Chicago, Alinea, and Eleven Madison Park, which was named number one at the 2017 World's 50 Best Restaurants.

'Taste the Big Easy' is the first pop-up dining event spearheaded by Torres in Melbourne and Australia. He is also the brains behind The Bill of Fare conference which brings together culinary professionals from around the world.  

Torres' event at Park Hyatt Melbourne's radii restaurant & bar is set to carry the same success, uniting gourmands of Melbourne through the smoky, seasoned and soulful flavours of the city he loves — New Orleans.

“I love creating new food experiences and I'm thrilled to be bringing this talented team to Melbourne to offer a taste of unique Southern Louisiana cuisine,” says Torres. 

Diners will enjoy the fusion of authentic Creole and Cajun cuisine that blend French, Spanish and West African flavours. Gumbo, jambalaya, po' boys and beignets are just some of the southern comfort dishes available from a colourful array of stations, while the culinary team roam the event to talk up their home state. Live Dixie-style jazz and entertainment will fill the multi-floor, Art Deco radii restaurant & bar, reminiscent of the lively New Orleans atmosphere.

'Taste the Big Easy' feasting-style dinners are available from 6:00pm, Friday 11th October and Saturday 12th October. Two dining options are available:

Taste the Big Easy will form part of Park Hyatt's global 'Masters of Food and Wine' event series, which offers curated, immersive and unexpected enogastronomic experiences for guests. Park Hyatt Melbourne's Executive Chef Mark Sainsbury looks forward to delivering this culinary celebration, alongside Torres and his New Orleans team.

The two nights at radii restaurant & bar will be the inaugural 'Taste the Big Easy' events, in a series that will take place around Melbourne the same weekend of 11th to 13th October. Following radii restaurant and bar, Embla and Black Pearl will subsequently take turns in hosting this exciting celebration of southern food.
