Award-winning celebrity chef Sam Leong will be visiting One&Only Hayman Island, the ultra-luxury resort located in the heart of Australia's Great Barrier Reef, to host a series of dinners and chef master classes in November and December.
As one of Asia's most prolific chefs, guests will have the rare opportunity to enjoy an intimate Chef's Table with the Singaporean chef on Friday, 28 November 2014. He will work alongside One&Only Hayman Island's Executive Chef Grant Murray to prepare a six-course degustation menu that will be paired with the finest wines in the resort's main kitchen. The menu will showcase some of the Chef's iconic dishes, including Spiced Foie Gras Parfait; Warm Egg White Spanner Crab; Sous Vide Salmon; Kurobuta Pork Belly and Harvey Bay Scallops and Slow-Cooked Wagyu Oxtail. The evening will conclude with Young Coconut Ice, Sweetcorn and Coconut Pudding and Petit Fours. This special Chef's Table is US$450 per guest, inclusive of wines.
For food enthusiasts and aspiring chefs alike, interactive cooking classes with the chef are available on Friday, 28 and Saturday, 29 November? 2014. Participants will learn to prepare either Tempura Crystal Bay Prawns, Spanner Crab and Baby Spinach Broth or Thai Style Pineapple Fried Rice. After the class, guests will enjoy the dishes expertly prepared by Chef Sam Leong himself. Each class is US$250 per person.
From Thursday, 27 November to Monday, 1 December 2014, Chef Sam Leong will prepare an à la carte menu of signature dishes at Bamboo, the resort's Asian restaurant. From Spanner Crab and Baby Spinach Broth to Wok-Fried Darling Downs Tenderloin with Pan-seared Foie Gras, guests can enjoy his creations in the restaurant's secluded oriental garden which overlooks an authentic Koi pond. Each evening he will also serve Oven-Baked Lemongrass Boneless Chicken Thai Style and Singapore Style Mee Goreng with Seafood as part of the buffet at Pacific, One&Only Hayman Island's beachfront all day dining restaurant.

To celebrate the special event, One&Only Hayman Island is offering two different packages, either for two nights from US$1030 (AU $1180) per person twin-share, or for those that would like to enjoy the resort longer, a five night package is also available from US$1980 (AU $2275) per person twin-share. Each package includes luxury accommodation, daily breakfast at Pacific and a six-course Chef's Table experience on 28 November 2014 with paired wines. Each package is per person based on two people sharing.
