Tao Li at New World Millennium Hong Kong Hotel introduces an eight-course wine dinner menu available this July and August, meticulously crafted by new chef Bosco Li Ka Ting to pamper discerning diners. Offering an experience of gastronomic opulence, the menu features Chef Li's signature dishes paired with premium wines from Puchang Vineyard in Xinjiang, China.

Young and award-winning Chef Li joined the hotel early this year, bringing with him 15 years' culinary experience. He is dedicated to adding a modern flair to authentic Cantonese flavours, and is keen on preparing reimagined traditional Chinese dishes made with quality ingredients from around the world. Having studied design earlier in his career, he applies this passion to artistic food presentation and plate arrangement in this eight-course tasting menu.

The menu starts with three appetisers – Slowed-Cooked Marinated Goose Liver Toasts, Pan-Fried Shimeji with Salt and Deep-Fried Japanese Turnip and Bamboo Charcoal, as well as Tao Li's ever-popular Barbecued Black Pork with Osmanthus Honey Sauce. This is followed by a smooth double-boiled clear soup slow-cooked with fish maw and seaweed for four hours, giving the broth a briny sweetness and intense flavour.

Seafood lovers will delight in the seemingly simple braised Boston lobster in fresh seafood broth. The dish is served with flat rice noodles which soak up the richness of the ingredients. Next on the menu are Pan-Fried Maitake with Diced Wagyu Beef and Ginger Powder, and Steamed Whole Tomato with Foxtail Millet – a meticulous creation regarded as Chef Li's signature item. Steamed to 70% cooked, the tomato is stuffed with healthy foxtail millet and diced mushrooms and served with creamy rice porridge to highlight the dish's subtle freshness and earthy flavour.

Next, Japanese Udon with Prawns, Preserved Vegetables and Chilli Oil releases a pungent aroma with a numb-spicy taste sensation. Adding a modern twist to the creation, Chef Li tops it with balsamic vinegar pearls created via molecular technology.

Last but not least, the dessert duo rounds out a memorable journey of exceptional culinary finesse. Chilled Sago Cream is made with Taiwanese pink guava and pomelo peel for a perfect combination to refresh diners' tastebuds and the Deep-Fried Mashed Sweet Purple Potato with Japanese Tokachi red beans showcases delicate sweetness and texture.

Three premium Ecocert organic varietals from Puchang Vineyard, a prize-winning winery in China, have been carefully selected to complement the dishes, elevating the dining experience to another level. Puchang, the first organic wine producer in the country, is dedicated to changing the world's perception of winemaking in China. Located in Turpan Valley in the heart of Xinjiang, the vineyard shares the same latitude with some of the world's best winemaking regions. It is committed to producing quality, pesticide-free wines from local varietal grapes found only in the region, guided by dedication to regional authenticity and stewardship.

The tasting menu is available at Tao Li daily from 1 July to 31 August 2021 and is priced at HKD1,080 per person. Guests can also opt for a wine-pairing option for an additional HKD420 per person.
