Princesa Yaiza Suite Hotel Resort is delighted to present the brand new menu at their beautiful Isla de Lobos restaurant. The menu is based on the Slow Food philosophy, an idea stemmed from an opposition to fast food, the disintegration of local food traditions and a lack of interest in sustainability.
Combining the pleasure of good food with a dedicated commitment to the community and the environment, Slow Food's slogan is 'Good, Clean and Fair.' With this in mind, Princesa Yaiza's incredible Head Chef, Carlos Pérez (who has previously worked at Sketch with the eponymous Pierre Gagnaire and at the Spanish 3 Michelin star restaurant El Bulli), has created their exciting new menu.
Only local, organic produce is used. These two criteria come hand-in-hand in Lanzarote, whose unique form of agriculture takes advantage of the volcanic soils and the growth this offers. Wild volcanic plants such as saltwort, cosco, wild fennel and Nopal cactus are also used – an innovative phenomenon in Lanzarote known as volcanic gastronomy.
From the sea, the restaurant offers tuna, santa prawns, cherne, sea bream, and all sorts of other fresh rockfish and shellfish. Local suppliers provide outstanding organic meat, with La Finca de Uga providing award-winning cheeses and Canary Island Black suckling pig, La Tanganilla Organic Association of Lanzarote offering their volcanic gastronomy, Playa Blanca, Arrecife and Morrojable Fish Auctions providing fresh fish from the Atlantic coast of the Canary Islands, and Don Juan de Armas Mill (1910), San Bartolomé supplying toasted wheat and maize.
