Executive Sous Chef Parashuram Pathak has just created and launched the new menu for The Fireplace restaurant at InterContinental Sanctuary Cove Resort.
Parashuram who has been at the resort since April has created a diverse new menu for this delightful restaurant making the most of the open-wood fire ovens and cookery which takes prime position in the restaurant.
"I've really enjoyed creating a menu featuring food mainly prepared in the wood-fire ovens. Cooking in a wood-fire oven gives us more control over the food and wood cookery is the ultimate flavour enhancer.
"The main wood-fire grill menu features four supreme cuts of meats complemented with chutneys and relishes.
"I have worked closely with local suppliers to incorporate some amazing fresh seasonal produce into the menu," said Parashuram.
"The Berkshire pork belly comes from Byron Bay and we've sourced some premium quality grass fed beef from the Darling Downs along with local fruit and vegetables from Mt Tamborine and some of the award winning cheeses from Witches Chase Cheese Co.," he said.
Menu highlights include entree of Braised Berkshire Pork Belly with quince, gastrique sauce and crackling; main of Grass-fed beef eye fillet with eggplant relish and beef jus; and Deccadence dark & white chocolate semi-fredo raspberry jelly & prune compote with edible flower.
Guests wanting to sample more of this amazing new menu also have the option to indulge in a new five course degustation menu with accompanying wines.
The Fireplace at InterContinental Sanctuary Cove Resort is open for dinner Monday - Sunday from 6pm - 10pm.
