New Executive Chef Hemant Dadali Poised to Raise the Culinary Bar at Pangkor Laut Resort

Malaysia’s luxurious Pangkor Laut Resort is pleased to introduce its new Executive Chef, Hemant Dadlani, who has been tasked with refreshing the popular Chef’s Kitchen Experience with a stronger ‘farm-to-table’ philosophy as well as further perfecting the 32 exclusive private dining locations around the island.

Chef Hemant honed his craft in various kitchens around the globe, such as the Fairmont in Bermuda, The Oberoi Hotels in India, Hotel Kura Hulanda in Curacao and more recently, the Rosewood Little Dix Bay, British Virgin Islands.

He was classically trained in French food and traditional Indian gastronomy and champions cooking with fresh local produce. His plan is to revitalise Pangkor Laut Resort’s seven dining establishments with the new onsite vegetable and herb gardens.
 

Chef Hemant’s approach to cuisine is evident in the newly re-worked Chef’s Kitchen Experience, which now includes a visit through the markets of Pangkor Island to watch local fisherman bring in the day’s catch and select a fish to cook in the hands-on cooking class back in the kitchen. Guests can also see the community’s noodle maker at work and peruse the island’s myriad of preserved seafood. The day culminates with a lunch feast facing the Straits of Malacca.
 

As the island is known for its fresh golden barramundi, plump lobsters and tiger prawns, Chef Hemant places emphasis on using local produce throughout Pangkor Laut Resort’s variety of dining experiences. His eagerness to explore and reinterpret the various ethnic flavours of Malaysia is especially evident throughout the cuisine at Chapman’s Bar on Emerald Bay, and the Royal Bay Beach Club by the infinity pool.
 

Pangkor Laut Resort’s 32 varied private dining experiences located around the island are also getting an exclusive Chef Hemant make-over. Tailored to each individual request, these dining experiences cater for everything from a romantic candlelit proposal, an anniversary on the rocks, a family feast in a pavilion amidst the lilies and koi, to an indulgent beach picnic or a barbecue on an antique Chinese junk, each nook offers a selection of menus ideal to the location and event.
