Chef Belin's culinary prowess has led him through a decade of service at Hotel Le Beauvallon St Maxime to international collaborations with The Ritz-Carlton brand; providing consultations in the launch of L'institute Gastronomique Riviera, and finally into the kitchens of M restaurant in the heart of the French Riviera.

 

Set amidst acclaimed landscape artist Sophie Agatha Ambroise's poetic, Les Victoires Du Paysages award-winning garden, the 30-seat M restaurant plays host to Chef Jean-Michel's culinary magic, where the region's best produce from market-fresh lobster and halibut, to morel mushrooms and spring lamb are given a light Mediterranean kiss before they are sent to guest tables.

 

In the day, Chef Belin presents summery salads and simply grilled meats and seafood, while come sundown the kitchen switches to high gastronomy with dishes such as the Foie Gras Tarte Tatin with Wild Greens and Meurette Braised Beef Tenderloin with Morel Mushrooms and Quail Eggs. The journey of flavours extends to dessert, with samplings of sweets such as the Tiramisu infused with Cepes and Passionfruit Macaron with Spiced Gianduja Chocolate Coulis.



Chef Belin's handpicked seasonal produce, coupled with his Mediterranean influenced cooking style and breathtaking contemporary presentations make him the perfect addition to Muse Saint Tropez.
