Every year, for a tantalisingly brief season during August and September, the rare matsutake mushroom flourishes in the forests of Bhutan.

 

This enigmatic, cigar-shaped funghi, which grows under fallen leaves on the forest floor, is coveted in Eastern cooking for its robust alpine flavour, the mushrooom's rarity commanding high market prices.

 

Between August 1st and September 15th 2012, guests at Uma Paro, Bhutan can feast on a special matsutake lunch or dinner, created exclusively by our executive chef.

 

Cooked Western or Japanese-style, dishes include stir-fried pepper chicken with soy-marinated matsutake, seared hiramasa kingfish with fennel puree, and apple and frangipani tart with ginger ice-cream and matsutake wafers.

 

Guests can also experience a matsutake afternoon tea, featuring matsutake and walnut shortbread, matsutake cookies and a refreshing ginger masala and matsutake tea.

 

Uma Paro is also offering guests already booked on its set-price packages a range of complimentary matsutake-themed activities.
