The Puma Hotels' Collection and Luke Thomas, Britain's youngest head chef and rising star in the culinary world, have announced that together they will launch a new restaurant, Luke's Broadway, at the legendary Lygon Arms, in picturesque Broadway, in the Cotswolds.
The 35-seat bistro will open on 19 June 2013, and Luke has assembled a talented kitchen and front-of-house team to execute his modern British menu and informal style of operation.
Set adjacent to The Lygon Arms with a frontage directly on the High Street, Luke's Broadway will be open for lunch and dinner from Wednesday to Sunday. The website is www.lukesbroadway.com. Table reservations can be made on 01386 854418.
The Lygon Arms is also offering residential DBB packages for those wishing to experience the restaurant first hand this summer. Packages start from £149 per person which includes a three course dinner at Luke's Broadway, and bed and breakfast at The Lygon Arms*. Bookings can be made online via www.pumahotels.co.uk/lukes or on 0800 652 8413.
Fredrik Korallus, CEO of Puma Hotels' Collection, explained: "Luke Thomas has the vision, passion and culinary talent needed to add excitement to Broadway. Luke will provide an inspiring reason to dine and stay in Broadway."
Luke Thomas added: "The legacy of The Lygon Arms, the beautiful Cotswolds setting and a new partnership with Puma Hotels inspired me to engage in this new venture. Luke's Broadway will give me the chance to work in a small, bistro environment, using great local produce and collaborating with the expert team at the hotel."
Typical dishes on the launch menu will include crayfish cocktail with gem lettuce, radish and green apple; crispy duck salad with pink grapefruit and soused red onion; glazed bread and butter pudding; and panna cotta with rhubarb and blood orange.
Luke Thomas, aged 19, remains chef patron at Luke's Dining Room at Sanctum on the Green, in Cookham Dean, near Marlow, Berkshire. This is where he kicked off his professional career in early spring 2012, after several years of diligent stages at many top UK and international restaurants since the age of 12. Luke has also masterminded the concept and menus for Retro Feasts, the six-month pop-up diner in Mayfair, London, which launched on 15 May 2013.
*Subject to availability and applicable for stays between 19 June - 31 August. A supplement applies for Saturday night stays.

About The Lygon Arms
One of the most famous hotels in the Cotswolds, the four-star Lygon Arms in Broadway has been welcoming travellers since the 16th century and is steeped in history. Oliver Cromwell stayed in 1651, the night before the Battle of Worcester, and Charles I used one of the hotel's rooms, which had a hidden exit to keep his romances secret. The hotel has 77 rooms, including seven suites, some dating back to 1532. The main house was lovingly restored whilst retaining many of the hotel's original features, including the timber and flagstone floors, wood paneling, architraves, dado rails and stone mullions. Guest can be pampered in the hotel's beauty rooms and spa, or make use of the indoor swimming pool, sauna, gym and tennis courts at the health club.
