LANCASTER, PA – (October 21, 2019) – The Lancaster Marriott at Penn Square announces the appointment of Brenton Sollenberger as Beverage Director. Sollenberger will provide strategic leadership and oversee The Exchange, Lancaster City's highest rooftop bar; and Plough, a modern American dining concept, in addition to the hotel's banqueting and catering services. With over a decade of industry experience, Sollenberger brings invaluable expertise to the hotel's culinary offerings, with a focus on elevating the dining experience and overall guest satisfaction.
Sollenberger leads the charge in executing The Exchange and Plough's handcrafted beverage menus, utilizing local and seasonal ingredients to create unique, inventive cocktails alongside modern takes on classic favorites. Prior to joining the Lancaster Marriott at Penn Square, Sollenberger was the Lead Bartender at POUR on Prince. He has deep-rooted connections in the city's cocktail culture scene, with bartending positions ranging from casual pubs and fine dining, to a fast-paced nightclub. He has also held positions at some of the city's most notable establishments, including at Pressroom Restaurant and Bar, Firepit Restaurant and Bar, Quips Pub, Aussie and The Fox and Chameleon Club.
