Led by Chef Chalermwut “Nui” Srivolalkul, Restaurant Manager Somruedee “Fee” Ruamsakul and their talented team, Jaras focuses on sourcing the finest ingredients from Thai farmers, local fisherman and independent, small-scale suppliers. This high-quality, sustainable and seasonal produce is treated respectfully, fusing time-honoured cooking techniques with creative flair and artistic presentation to transport guests all the way from the farm to the table. 

From the freshest lobsters at Sarasin Farm in Phuket, goat from nearby Bang Tao Farm, and organic chickens and free-range eggs from Tan Khun Farm in Nakhon Pathom, to fragrant hom dok hung rice from Sakhon Nakhon province, organic palm sugar from a village in Songkhla, and bor hua haad salt from Bueng Kan province, Chef Nui and his culinary experts have connected supply chains from Thailand’s best producers. Jaras also works with local farms, expert in terroir, growing fresh organic vegetables. 

While each dish is deeply rooted in Thai tradition, the visitor experience at Jaras Restaurant embraces the sophistication of European fine dining. Guests are welcomed with pre-dinner drinks and canapés, and the nine-course tasting menu transports diners on a multi-sensory journey. Enticing à la carte options are also available, and every epicurean adventure at Jaras is enhanced by a carefully curated wine list and handcrafted cocktails. 

This progressive approach to Thai cuisine was praised by the Michelin Guide 2022, which commented: 

“Despite the luxury setting, Jaras retains honest roots. The intimate design draws influence from the Li Thai, Sukhothai era. The restaurant is named after the owner’s grandma whose cooking inspired some of the recipes.
