When Executive Sous Chef Parashuram Pathak commenced at the resort last year he had a dream to build a spectacular herb garden right outside the resort’s signature restaurant The Fireplace.
With a passion for fresh produce and a lot of hard work from Parashuram and his team, that dream has come true and the garden terrace outside the restaurant is now boasting a spectacular herb garden which is home to over 21 different herbs and a few vegetables.
Parashuram and his team are delighted to have fresh produce right at their fingertips.
“It doesn’t get more fresh than this,” said Parashuram.
“The idea to have a garden right in front of the restaurant allows us to be more creative in using those herbs in the restaurant. The inspiration for our dishes comes from the produce we see each day and we are loving that we can pick our herbs just before the service, which ensures the aroma is still alive.
“The garden is seasonal, sustainable and has a character of its own and boasts different types of citrus, the most common herbs and some rare herbs that allow us to add unique flavours to our dishes,” he said.
Guests to The Fireplace are now enjoying a new menu featuring produce picked fresh from the garden.
The team in The Verandah Bar and Pool Bar are also enjoying using fresh herbs everyday in their drinks and cocktails.
The Fireplace at InterContinental Sanctuary Cove Resort is open for dinner Monday - Sunday from 6pm - 10pm.
