Carousel, Royal Plaza on Scotts, brings authentic flavours of Southern Italy to its buffet counters for the first time from 2 to 11 May 2013.  Italian guest chef, Marco Maggio, joins the award-winning buffet restaurant to whip up a sumptuous Italian spread.

 

Chef Marco has honed his skills in renowned establishments spanning more than 20 countries worldwide, such as England, Greece, Thailand and China. Having crossed the globe for various culinary stints over the past 23 years, Chef Marco's recipe to success lies in both his culinary expertise and passion for the culinary art, as he believes that every guest should enjoy the very best.

 

Hailing from Brindisi, Apulia, a city along the southern coast of Italy, the chef's heritage is evident in his style of cooking, with his forte being in Mediterranean-style seafood dishes, favouring the use of au-naturel ingredients such as herbs and olive oil to bring out the flavours. Chef Marco also takes pride in homemade pastas such as pappardelle in zucchini carbonara as well as spinach and ricotta ravioli with butter and sage sauce, which his hometown is widely known for. 

 

Guests can look forward to sampling rotational menus, specially conceptualised for Carousel, that feature Chef Marco's signature dishes such as pan-fried Orbetello sea bass with Roman artichoke cream, taggiasche olive powder, semi-dried cherry tomatoes and baby fennel, hand-crafted tortellini filled with cheese on tomato water and basil essence, saffron risotto with spicy scallops and asparagus, spaghetti chitarra with tiger prawn, crabmeat and Italian cherry tomatoes in basil sauce as well as slow-braised beef cheek in own jus with basil mash, baby vegetables and porcini.


Carousel will also be dressed up in Italian-inspired décor during the promotion to deliver a refreshing dining experience for guests. The promotion is available during the lunch meal period from 12pm to 2pm at $46++ on weekdays (Monday to Friday) and at $50++ on weekends (Saturday, Sunday and Public Holiday). Dinner is available from 6.30pm to 10.30pm at $62++ on weekdays (Sunday to Thursday) and $75++ on weekends (Friday, Saturday and Eve of Public Holiday).
