InterContinental Sanctuary Cove Resort



InterContinental Sanctuary Cove Resort is pleased to welcome Sommelier David Stevens-Castro to the role of Sommelier and Maitre'd at the resort's signature restaurant The Fireplace.

 

Originally from Chile and with a degree in Agricultural Science majoring in Enology and Fruit Production, and a level 2 Certificate of the Wine and Spirit Education Trust for Sommeliers, David's exceptional service and wine knowledge will be paramount when it comes to the guests overall dining experience.

Since arriving last month, David has been busy working with with Executive Sous Chef Parashuram Patak on the new degustation menus for The Fireplace and is working closely with suppliers to create some specialist wine tasting events.

David is a well known Independant Wine expert specialising in wines from Chile and Argentina and also writes for a number of wine publications. Prior to joining InterContinental, David worked at Salt Grill in Surfers Paradise and Pepper's Resort Byron Bay.

 

David's favourite wine region in Australia is Margaret River and with champagne being his all time favourite it's only fitting that his favourite wine region in the world is Champagne, France.

 

In his new role David looks forward to leading The Fireplace team to deliver fine dining service and to work closely with Executive Sous Chef Parashuram Pathak and the to see the restaurant evolve to new levels.

 

David is working on a new wine list for the restaurant and believes that an award winning wine list consists of good variety representing a broad selection of the wine regions of the world.

 

"It needs to have a nice balance at different price points, offer a strong selection by the glass and include a profile producer as well as verticals and rare wines to add complexity," said David.
