InterContinental Hong Kong's Lobby Lounge continues its 2019 cocktail series showcasing unique spirits from artisanal distilleries from around the world.

For the second episode the hotel's resident mixologist Sabrina Cantini-Budden has sourced. award-winning Teeling Whiskey for her cocktail creations.

As per Sabrina, “The essence of a cocktail lies in the spirit. For our new artisanal cocktails, I have sourced the flagship Irish craft whiskey from the Teeling family.”

The Teeling Whiskey used for the new cocktails is made with hand-selected casks which are given an additional 6-9 months further maturation in ex-rum barrels to impart extra character and a distinctly smooth flavour unique to Irish whiskey. Bottling at 46% with no chill filtration completes the creation of an Irish whiskey of true character.

The Teeling Whiskey Cocktails are HK$195 to HK$250 each.

The Spirit of Dublin – A Craft Revival
Since 1782 the Teeling Family has been crafting Irish whiskey.  In 1782 Walter Teeling set up a craft distillery on Marrowbone Lane in the Liberties area of Dublin, commencing a 230 year tradition of distilling for the Teeling family. Its whiskeys embody the Teeling brothers entrepreneurial spirit, with innovation at the core of everything they do. From the malting and blending of grains to the yeast used in the fermentation, to the distillation process itself, Teeling dares to be different. “If distilling is a science, the processes of barrel selection, aging and blending is an art perfected by human palates and noses”, as per Jack and StephenTeeling.

The delicate base of Irish whiskey is the perfect canvas upon which to layer character, flavour and depth. Varying the time, style and number of barrels at each stage adds to its subtlety and complexity of flavours.

Teeling does not chill filter its whiskey prior to bottling, thus leaving much of the body, character and richness in the bottle. It brings its whiskey from cask strength to its signature ABV of 46%, maintaining that extra depth of character.

The Teeling team is also bringing more choice and innovation into Irish whiskey. By taking more time and using innovative cask maturation techniques, its young craftsmen are producing small batch bottling of unique Irish whiskeys. Its goal is to retain the drinkability of Irish whiskey while introducing new and interesting flavours to complement the naturally smooth and sweet taste of Irish whiskey – bringing passion for quality, authenticity and craft into each bottle.
