Hyatt Regency Sanctuary Cove Welcomes New Executive Chef

Hyatt Regency Sanctuary Cove

Hyatt Regency Sanctuary Cove is proud to welcome Executive Chef Nitin Kumar.

Having graduated from the Hotel Management Institute in Mumbai, India where he was educated in hotel management, Nitin has also gained extensive culinary experience in a number of prestige hotels throughout the world.

Starting out as a commis pizza chef in the Royal Mirage Hotel, Dubai he then returned to India and joined the Hyatt family for the opening of the Grand Hyatt Delhi. From there he progressed to the Hyatt Regency Mumbai where he became proficient in live seafood gourmet preparation.

An interest in western-style cooking called him from Asia, and he crossed continents to join Hyatt Regency Auckland where, in just three short years he rose to the appointment of Executive Chef. His oriental food preparation talents have seamlessly melded with his new found, but perfectly crafted contemporary cuisine skills honed in New Zealand. Now calling Australia home, his impressive resume leaves him well suited for the coveted position at Hyatt Regency Sanctuary Cove.

Trained in classic French style cuisine, pastry making and banqueting he has also practiced as a sous chef and showed propensity for Italian dishes. Possessing a flair for visually exciting compilations and creative flavours, Nitin Kumar will be a strong asset to the hotel.

Within his new role, Nitin will be responsible for breakfast, lunch and dinner at Cove Café as well as hotel functions, conferences and room service. Based on his initiatives at Hyatt Regency Auckland, guests and visitors at Hyatt Regency Sanctuary Cove can expect some exciting new developments on menus at this five-star resort.

Nitin has had more than enough practice to assure confidence in his skills. From day one, he has catered for up to 300 covers each sitting, yet he thrives on producing a standard of exceptional quality.

While he is fiercely passionate about cooking, and this drives his creativity and interest in new cuisines, Nitin attributes his success to his commitment and determination.

"Everyone is passionate about cooking, but you rarely find someone who is committed - commitment is the key," he said.

His expertise in a wide variety of cuisines brings an exciting mix of fresh and innovative fare to the tables of Hyatt Regency Sanctuary Cove.
