Hugo's, the fine-dining restaurant at the Hyatt Regency Hong Kong, Tsim Sha Tsui, partners with Dragonair to offer a new inflight menu featuring authentic European dishes. The new menu will be offered to First Class and Business Class passengers flying on selected Dragonair flights from Hong Kong to Beijing and Shanghai from tomorrow until mid-April 2015.
This is the first time that Hyatt Regency Hong Kong, Tsim Sha Tsui and Dragonair have joined hands for a special promotion, creating a menu that features 23 dishes including soups, appetisers and main courses. Hugo's has been recognised for its impressive array of traditional European dishes using only the finest ingredients. Each of the dishes on the Dragonair menu has been carefully designed and adapted by Michael Donlevy, Executive Chef of the hotel.

Our professional catering team has worked very closely with Executive Chef, Michael Donlevy, to overcome the various challenges of adapting the restaurant's flavourful dishes for our passengers' enjoyment in the air.”
Using only the finest ingredients, signature dishes from this new menu promotion include Lobster bisque and Peppered Beef Tenderloin, Seasonal Vegetables, Pepper Sauce. The menu also includes some dishes designed exclusively for Dragonair, including the Fresh Crab Salad à la Russe appetiser and Pan-fried Norwegian Salmon Fillet, Crayfish Tails, Caper Parsley Sauce.
Lobster Bisque is made from lobsters, vegetables, aromatics, wine and stock, and is simmered delicately to extract the rich flavours from the shellfish. Topped with a dash of fresh cream, the dish is one of the most popular offerings at Hugo's.
Peppered Beef Tenderloin, Seasonal Vegetables, Pepper Sauce is a traditional French dish with high-quality beef tenderloin coated with cracked peppercorns before cooking. The peppercorns form a crust on the steak when cooked and provide a pungent yet complementary counterpoint to the rich flavour of the fine beef.
