Calgary's coffee scene was built by engineers, competitors, and perfectionists. The coffee revolution began in 2007, when University of Calgary engineering students, Phil Robertson and Sebastian Sztabzyb, with a caffeine addiction and big dreams, set out to change the way Calgarians thought about coffee. What started as a tasting lab in Sebastian's kitchen, evolved into nine permanent specialty coffee locations and helping to pioneer Canada's third-wave coffee movement. They've remained committed to working with farmers only practicing organic methods and paying well above Fairtrade rates, resulting in long term relationships with their producers. Small batches of coffee beans are brought into Calgary and roasted in the historic Simmons Building in the East Village, where visitors can enjoy a cup in location at their café, learn the skill of latte art, master the basics of espresso, or join a tasting class with specialty coffee.
Phil & Sebastian's became a training ground for the next wave of coffee connoisseurs. Benjamin Put, co-founder of award-winning Monogram Coffee – a Global Top 100 best cafe in North and Central America and the Caribbean in 2025, got his start as a barista for Phil & Sebastian. Benjamin has become the most decorated barista in Canadian history, setting a record in becoming a seven-time Canadian National Barista Champion, owning the titles for 2013-2017, 2023, and 2025. Benjamin earned third place at the 2025 World Barista Championship in Milan, Italy, further cementing Calgary's reputation as a global coffee destination.
