Hilton Brisbane executive chef, Jeremy Clark, is taking on the age old, breakfast favourite of baked beans with the introduction of a new 'signature' breakfast dish at Vintaged Bar + Grill.

Introducing Vintaged baked beans with ham hock, Lyonnaise sausage and a choice of eggs

Clark's authentic, home-style baked beans uses a whole ham hock to slow cook in the pot with cannellini beans, allowing the ham to flake through and create the smoky, meaty flavour.

"The addition of Lyonnaise sausage to the dish adds a subtle meat flavour which marries well the ham hock baked beans and herbs," Clark said.

"Created specifically for the cooler winter months, the retro dish is a nod to old-style home cooking reminiscent of grandma's comfort food with simple ingredients but delicious flavours."

Following on the recent trend of quality and affordable fare that is uncomplicated, Clark's cooking style is simple and fresh.

Inspired by his days working under Serge Dansereau, whose influence on new and emerging homemade produce is legendary, Clarke describes Serge as the first chef to educate him on the importance of using small growers and providores and supporting local industry.

The dish is available a la carte or as a deconstructed part of the traditional breakfast buffet menu for guests to add a little fun and 'make your own', perfect for the kids.

With an illustrious career spanning more than twenty years as a chef, his priority is to ensure that Vintaged strives to surpass competitors whilst upholding its Chef Hat standard.

Breakfast at Vintaged runs from 6:30am to 10:30am Monday to Friday, 7:00am to 11:00am on weekends, and offers free wifi for all diners.
