July 2023 (Phuket, Thailand): Strengthening its commitment to celebrating exceptional culinary talent and deep focus on locavorism, hom announces the launch of “Unchartered Territory”. The dining series will see hom welcome chefs from around the world to collaborate with the hom culinary team -- led by Chef de Cuisine Ricardo Nunes -- to produce exquisite menus that embrace the spirit of innovation and pay homage to local ingredients.

The first in a series of master chef collaborations, Unchartered Territory Volume 1 will see Chef Ricardo Nunes and his team join forces with Chef Vasco Coelho Santos of renowned one-Michelin-starred Euskalduna to create an 8-course tasting menu. In the days leading up to the event, Chef Ricardo and Chef Vasco will scour Phuket's farms and markets to personally handpick the freshest local ingredients and will use innovative in-house fermentation techniques to create a truly one-in-a-lifetime dining experience.

Maintaining an element of mystery, the meticulously crafted menu will be unveiled just one day prior to the event. From playful reinterpretations of classic dishes to entirely new creations, the menu promises to be a testament to Chef Vasco and Chef Ricardo's artistry and dedication to culinary exploration.

Chef Vasco's culinary background includes stints in some of the world's finest restaurants, including the legendary elBulli. His experiences have culminated in a boundary-pushing approach that reimagines traditional cuisine. Boasting one Michelin star, Euskalduna is a showcase of Chef Vasco's passion toying with flavours to create surprising dishes that leave a lasting impression.

The “Unchartered Territory” series by hom will continue to stimulate senses and challenge preconceived notions of local ingredients, tapping into their full flavour potentials. Planning for Volume 2 is currently underway. More details will be shared in due course.  

In line with “Unchartered Territory Volume 1”, InterContinental Phuket Resort has launched an exclusive “Unchartered Territory” stay experience valid between 1st of August until 10th of August which includes; signature hom welcome amenity, 8-course Unchartered tasting menu journey, daily breakfast, and late check-out. 

This collaboration menu will be available for both lunch and dinner on Friday 4th August and Saturday 5th August 2023. 

The menu is priced at THB6,000++ per person, with a recommended wine pairing for THB3,750++.
