All of the seaweed-wrapped creations were designed by Head Sushi Chef Kon W. Lee who brings over 18 years of experience with Japanese cuisine.

Signature menu items include the Amatsu Roll made with snow crab dynamite, masago, cream cheese, asparagus and tempura flakes inside of seared tuna topped with avocado and served with a garlic butter eel sauce and the Westin Paradise Roll wrapped with pink soy paper, tempura soft shell crab, frisee, atop with spicy mayo, avocado and shrimp. The menu features a variety of fresh seafood such as salmon belly, conch, and Bluefin toro paired with tasty embellishments as well as basic maki and starters like truffle ahi tartar.

“Making sushi is like creating a piece of art and I’ve crafted a menu complete with savory culinary creations for the Westin guest,” said Chef Lee.

The restaurant features a lounge-like feel with simple yet modern furnishings. The color palette is reflective of the nearby ocean views with soft blues and tans. Guests sitting at the bar will get an up-close view of the action as the chefs prepare a variety of raw dishes while those lounging at the nearby pool will also have the opportunity to order from the sushi menu.
