The festive celebrations have already begun at Grand Hyatt Melbourne with acclaimed chef Dane Clouston joining the hotel as its new Executive Chef as of 1st November, 2018. 

Dane joins Grand Hyatt Melbourne after serving six years at Park Hyatt Melbourne as Executive Chef where he was known for pushing the boundaries with his creative culinary and passionate approach to dining across the hotel.

Dane's culinary career began at a young age when he packed up and left his home town of New Plymouth, New Zealand, to study cooking in Adelaide. He then moved to Melbourne, where he met award-winning Melbourne chef, Teage Ezard, (restaurants EZARD and Gingerboy) and in 2000, began working in the EZARD kitchen – a two hat restaurant and one of the most respected fine-dining institutions in Melbourne. 

In 2004, Dane went on to Hong Kong to open Opia with renowned restauranteur Yenn Wong at the famous JIA Hotel. By 2005, Opia had been named “Best Restaurant in Hong Kong" by South China Morning Post along with being listed in the prestigious Conde Nast “Hot tables” annual list.   

In 2008, Dane moved to The Puli Hotel & Spa Shanghai as the opening Executive Chef. During his tenure there, Jing 'An, one of the hotel's main restaurants, fast gained a reputation as one of Shanghai's top dining venues and won numerous international awards for excellence. After four years, Dane returned to Australia and joined the Hyatt family.  

With his incredible wealth of experience and culinary knowledge, Grand Hyatt Melbourne is thrilled to have Dane lead its team of chefs and anticipate an exciting 2019 as Dane adds his personalised style and expertise to the hotel's restaurant and events.
