They will be cooking up recipes from their new Seahorse cookbook, food inspired by their travels in the Mediterranean and favourites on the menu of the Seahorse restaurant. MITCH TONKS' route from accountancy to culinary stardom was as unorthodox as it was successful.  Today he is a gifted fishmonger, talented chef, innovative restaurateur, and first-class cookery writer.  But above all he remains a passionate advocate for the delights of the sea.  Among many awards, The Independent labelled him 'a fishmonger for the 21st century', Observer Food Monthly awarded The Seahorse Best UK Restaurant, Tatler named him Restaurateur of the Year, and the World Gourmands Awards named his Fishmonger's Cookbook Best Fresh Fish Book.  In addition to running five restaurants including The Spiny Lobster in Bristol, The Seahorse in Dartmouth and RockFish in Dartmouth, Torquay, Plymouth and Brixham, he launched the Mitch Tonks Seafood Academy at South Devon College in 2012, has written five seafood cookery books and makes regular TV appearances.

Mitch and Mat have worked together for over 15 years, Mat has worked in kitchens and restaurants for nearly 30 years since he was 13 years old!  He went the classically trained route, and did an apprenticeship and early years at the renowned Chewton Glen Hotel and did a couple of stints at Michelin Star restaurants He was Head chef at Bath's Queensberry Hotel and Olive tree Restaurant in the mid & late 90's and met Mitch when he came in selling fish.  Mat started helping him with his cookery schools, and then began working with him full-time in 2000.  Together they opened, cooked in and operationally ran all the FishWorks restaurants, They left FishWorks to do what they'd dreamt of doing – opening a small restaurant serving great seafood by the sea, The Seahorse, this was in 2008.

NATHAN OUTLAW was inspired and taught to cook by his father. After two years at catering college he worked for a variety of mentors in London before moving to Cornwall to refine his skills at Rick Stein's The Seafood Restaurant in Padstow.  Appearing on the BBC's Great British Menu and Saturday Kitchen made Nathan a household name but it is his unwavering commitment to quality and consistency that has earned him respect among colleagues and the public as a leading seafood authority.  Outlaw's at The Capital, Nathan's London restaurant is a Michelin star holder since 2013, was awarded Best Value Set Lunch by Waitrose Good Food Guide 2014, and offers an ever-changing feast of the freshest fish dishes that evolve with the seasons and tides.   Nathan also has 4 other restaurants; Restaurant Nathan Outlaw (two-Michelin stars since 2011) and has 3 other restaurants Outlaw's Fish Kitchen (one Michelin star since 2015) in Port Isaac, Outlaws at St Enodoc and The Mariners in Rock.  He has written two fish cookery books, the first of which 'British Seafood' won the 2013 Food and Travel Awards title Cookery Book of the Year.  Nathan won the highly prestigious 'Chefs' Chef of the Year' at the AA Hospitality Awards 2014-15.
